Oreo Cookie Cake Brownies
Oreo Cookie Cake Brownies are what happens when a box of white cake mix meets a pile of Oreos and decides subtlety is overrated. The brownies are soft, chewy, loaded with chopped Oreo cookies, and topped with a creamy Oreo frosting that has even more cookies in it. And yes, the Oreo centers stay in. We are not monsters.

Why You’ll Love This Recipe
- Ridiculously easy. A box of cake mix does most of the heavy lifting.
- Loaded with Oreos. Eight cookies go into the brownies, and two more go into the frosting. Because apparently eight wasn’t enough.
- Soft and chewy. These aren’t cakey brownies pretending to be cookies. They’re dense, tender, and just the right amount of chewy.
- Creamy Oreo frosting. Cream cheese, powdered sugar, and finely chopped Oreos make a frosting that’s dangerously easy to eat straight from the bowl.
- Only 8×8 inches. Small pan, but big Oreo energy.

Making Oreo Cookie Cake Brownies
- Prep the pan. Preheat oven to 350°F. Line an 8×8-inch baking pan with parchment paper, leaving enough hanging over two sides to use as handles. Lightly spray the parchment with non-stick spray.
- Make the batter. In a large bowl, whisk together the oil and eggs. Stir in the 8 roughly chopped Oreos—cream centers and all. Add the cake mix and stir with a strong spatula or wooden spoon until everything is incorporated and no dry spots remain. The batter will be thick. That’s normal.
- Bake. Spread the batter evenly into the prepared pan. Bake for 20 minutes, or until the edges are set and the center is just baked through.
- Cool completely. Let the brownies cool completely in the pan before frosting. I know. Waiting is terrible. Do it anyway.
- Make the frosting. Beat the softened cream cheese, vanilla, and a pinch of salt until smooth and creamy. With the beaters on LOW, gradually add the powdered sugar until blended. Increase the speed and beat until light and fluffy.
- Add more Oreo. Stir in the 2 finely chopped Oreos. Don’t pulverize them into dust—you want little bits of cookie throughout the frosting.
- Frost and chill. Spread the frosting over the completely cooled brownies. Refrigerate for 30 minutes to firm up the frosting and make clean cuts.
- Cut and serve. Use the parchment handles to lift the brownies from the pan, then cut into squares. Or, circles, triangles, or whatever you’re into.
Pro Tips
- Keep the Oreo centers in. The cream filling adds sweetness and moisture to the brownies. Plus, removing it from eight Oreos is exactly the kind of unnecessary kitchen project nobody asked for.
- Don’t pulverize the cookies. Roughly chopped Oreos give you recognizable cookie pieces in the brownies, while the finely chopped cookies in the frosting spread that Oreo flavor throughout.
- Use a sturdy spatula. This batter is thick. It will make you question your upper-body strength for approximately 30 seconds.
- Cool completely before frosting. Otherwise, your beautiful cream cheese frosting will begin its journey toward the floor.
- Chill before cutting. Thirty minutes in the refrigerator gives the frosting time to firm up, making those nice, clean brownie squares much easier.
Storage
Store Oreo Cookie Cake Brownies covered in the refrigerator because of the cream cheese frosting. They’re especially good cold, straight from the fridge, which is convenient because apparently we’re pretending one brownie is a serving.
