Blueberry Protein Bars

A delicious bar made with oats and fresh blueberries made naturally sweet with honey and dates.

Materials

Bars:

  • 1 1/2 cups old fashioned oats
  • 2 scoops vanilla protein powder
  • 2 Tbsp. ground flaxseed
  • 1 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1/2 cup almond milk
  • 1/4 cup almond butter
  • 3 Tbsp. honey
  • 1 tsp. vanilla extract
  • 1/2 cup dates, chopped
  • 1 1/2 cups fresh blueberries

Topping:

  • 1/2 cup old fashioned oats
  • 3 Tbsp. date or coconut sugar
  • 2 Tbsp. almond butter

Instructions

  • Preheat oven to 350° and spray an 8 x 8" baking dish with non-stick spray.

Bars:

  • In large bowl, mix together the oats, protein powder, flaxseed, cinnamon, and salt.
  • In separate smaller bowl, mix together the milk, butter, honey, and vanilla.
  • Pour honey mixture and chopped dates into large bowl; stir to fully combine. Pour mixture into prepared baking dish, then sprinkle blueberries evenly across top.

Topping:

  • In small bowl, thoroughly mix the oats, sugar, and almond butter. Mixture will be crumbly. Sprinkle evenly over blueberries.
  • Bake for 25 - 35 minutes, or until top is golden brown. Cool completely on wire rack. Store covered in refrigerator. Enjoy!
