Blueberry Protein Bars

I hesitate to say these are healthy for you, because some people assume they won’t taste wonderful, but they do. They really, really do. Blueberry Protein Bars are made naturally sweet with honey, dates, and of course, the blueberries. Protein powder is added, along with oats, almond butter, and almond milk. Serve them at breakfast, as a snack, or as a dessert. They’re also delicious crumbled over yogurt or ice cream.

If I can eat healthy, AND have it taste good, I will. I’m not a nutritionist, but here’s what I’ve learned and pulled off the internet.

First off, protein powder helps to build muscles, aids in weight loss, and it helps to repair tissue, especially when weight lifting.

Now, I used almond butter, because it has healthier benefits than it’s counter part: peanut butter. The almond butter has more monounsaturated fats, which is believed to be heart-healthy.

Almond milk is not dairy, so that helps with many suffering with food allergies, plus it’s nutritious and low in calories.

Honey, especially locally sourced honey, (a natural sweetener) can strengthen immune systems against allergies caused by pollen. It’s also been known to have antibacterial, anti-inflammatory, and antioxidant properties.

Then, since I was on such a “health kick,” I threw in some ground flaxseed, which is loaded with nutrients and omega-3 fatty acids, plus it’s also rich in fiber.

Super Foods

Fresh blueberries, sometimes called a super food, is low in calories, and they may help lower blood pressure, prevent heart disease, improve memory, as well as aid in exercise recovery.

Last, but not least; dates. I added the dates for flavor, but also because they’re also known as a super food. They’re an excellent source of antioxidants, known to prevent free radical damage, and who doesn’t want that?

Making Blueberry Protein Bars

Preheat your oven to 350° and spray an 8 x 8″ baking dish.

The Bars

In a large bowl, mix the oats, protein powder, flaxseed, cinnamon and salt. In other words, the dry ingredients.

Then, in a smaller bowl, combine the wet ingredients; honey, almond butter, almond milk, and vanilla. Stir these ingredients until they are fully mixed together.

Next, pour the wet ingredients, plus the chopped dates, into the large bowl and stir until well combined.

Pour this mixture into the prepared baking dish, then sprinkle the blueberries on top.

The Topping

To make the topping, combine the oats, date sugar, and almond butter together.

It’ll be crumbly, making it easy to sprinkle evenly over the top of the blueberries.

Pop it in the preheated oven for 25 – 35 minutes, or until the top is golden brown.

Remove from the oven and let cool completely on a wire rack. Once cooled, store in the refrigerator.

Fresh blueberries, old fashioned oats, honey, and dates go into these delicious treats.

Serving Blueberry Protein Bars

I found that by refrigerating these bars, that they hold their shape better.

I recommend you serve them in a bowl or on a plate, though, because they still have a tendency to be crumbly.

This is awesome, however, when you want to sprinkle some over some ice cream or yogurt. So good!

They’re also a great snack or part of your breakfast.

Personally, I eat one after dinner as dessert, they’re that good. Seriously!

Ingredients

Bars:

  • 1 1/2 cups old fashioned oats
  • 2 scoops vanilla protein powder
  • 2 Tbsp. ground flaxseed
  • 1 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1/2 cup almond milk
  • 1/4 cup almond butter
  • 3 Tbsp. honey
  • 1 tsp. vanilla extract
  • 1/2 cup dates, chopped
  • 1 1/2 cups fresh blueberries

Topping:

  • 1/2 cup old fashioned oats
  • 3 Tbsp. date or coconut sugar
  • 2 Tbsp. almond butter

Instructions

  • Preheat oven to 350° and spray an 8 x 8" baking dish with non-stick spray.

Bars:

  • In large bowl, mix together the oats, protein powder, flaxseed, cinnamon, and salt.
  • In separate smaller bowl, mix together the milk, butter, honey, and vanilla.
  • Pour honey mixture and chopped dates into large bowl; stir to fully combine. Pour mixture into prepared baking dish, then sprinkle blueberries evenly across top.

Topping:

  • In small bowl, thoroughly mix the oats, sugar, and almond butter. Mixture will be crumbly. Sprinkle evenly over blueberries.
  • Bake for 25 - 35 minutes, or until top is golden brown. Cool completely on wire rack. Store covered in refrigerator. Enjoy!

    I also wanted to mention that these bars freeze well. I only had them in the freezer for about a month in a sealed container, but they were just as fresh defrosted as the day I made them.
