Curry Chicken Salad
The curry in this Curry Chicken Salad makes all the difference. It’s a classic chicken salad with crunchy celery, a creamy dressing, and tender chicken, but with the added flavor of curry. So good, and it’s flexible. You can serve it on a croissant as a sandwich, or place it next to some crackers as an appetizer or snack. My favorite is in a lettuce wrap with either romaine, butter, or bibb lettuce.
The flexibility of a good chicken salad makes it perfect for parties.
Serve with crackers or on small, lightly toasted bread as a finger sandwich.
Plus, it’s so easy to make and you can make it ahead of time.
In fact, it loves that fridge magic of melding all those flavors together making it even better tasting the next day.
Making Curry Chicken Salad
Start by chopping up a rotisserie chicken. You need two cups, so that’s about a 4lb. rotisserie.
Consider how you’re going to serve it, then chop it as necessary.
What I mean by that is if you’re serving it on crackers, chop the chicken up into smaller pieces.
If you’re eating it just for yourself and like that rustic look, the pieces don’t need to be as small.
Then, chop the celery up and stir in with the chicken.
Next, in a small bowl, mix the remaining ingredients: mayo, onion, curry, pepper, and salt.
You only need two tablespoons of onion, so I didn’t specify, but if you’re going to buy one, get a white onion.
Also, I start light on the salt, because I don’t know how much salt is in/on your rotisserie chicken (or home cooked chicken, for that matter).
Pour the curry mixture over the chicken and stir to evenly coat.
Does it look creamy enough for you? You can always add more mayo.
Cover the bowl and refrigerate for at least one hour, then taste.
Add more salt and/or pepper as necessary, then get ready to serve. Yay!
Curry Chicken Salad can be served many ways.
The obvious is between two pieces of bread with some green-leaf lettuce as a sandwich. Yummy!
Then, the same as my California Chicken Salad 4-ways, it’s great on croissants, in lettuce wraps, as a salad topper (instead of dressing), and it’s great on toast.
It’s also a wonderful appetizer served with crackers. Easy and delicious.
Eat it as a meal, snack, appetizer, and it’s perfect for parties.

Curry Chicken Salad
Ingredients
- 2 cups cooked chicken, chopped (from 1 rotisserie chicken)
- 3/4 cup celery, finely chopped (about 3 stalks)
- 1/2 cup mayonnaise (2/3 cup for creamier texture)
- 2 Tbsp. onion, finely chopped
- 1 Tbsp. curry powder
- 1/2 tsp. black pepper
- 1/4 tsp. kosher salt
- Optional: fresh cilantro as garnish
Instructions
- In medium bowl, mix together chicken and celery.
- In small bowl, mix together mayonnaise, onion, curry, pepper, and salt.
- Pour curry mixture over chicken and stir until evenly coated. Cover and refrigerate for at least one hour to overnight. Add more salt and/or pepper as necessary.
- Serve with crackers, on croissants w/green lettuce, or as a lettuce wrap in leaves such as bibb, butter, or romaine. Enjoy!
