Curry Chicken Salad
A tasty and delicious chicken salad loaded with tender chicken, crisp celery and onion, seasoned with curry. Perfect on a croissant, with crackers, or served on lettuce leaves.

- 2 cups cooked chicken, chopped (from 1 rotisserie chicken)
- 3/4 cup celery, finely chopped (about 3 stalks)
- 1/2 cup mayonnaise (2/3 cup for creamier texture)
- 2 Tbsp. onion, finely chopped
- 1 Tbsp. curry powder
- 1/2 tsp. black pepper
- 1/4 tsp. kosher salt
- Optional: fresh cilantro as garnish
In medium bowl, mix together chicken and celery.
In small bowl, mix together mayonnaise, onion, curry, pepper, and salt.
Pour curry mixture over chicken and stir until evenly coated. Cover and refrigerate for at least one hour to overnight. Add more salt and/or pepper as necessary.
Serve with crackers, on croissants w/green lettuce, or as a lettuce wrap in leaves such as bibb, butter, or romaine. Enjoy!
