Curry Chicken Salad

A tasty and delicious chicken salad loaded with tender chicken, crisp celery and onion, seasoned with curry. Perfect on a croissant, with crackers, or served on lettuce leaves.

Materials

  • 2 cups cooked chicken, chopped (from 1 rotisserie chicken)
  • 3/4 cup celery, finely chopped (about 3 stalks)
  • 1/2 cup mayonnaise (2/3 cup for creamier texture)
  • 2 Tbsp. onion, finely chopped
  • 1 Tbsp. curry powder
  • 1/2 tsp. black pepper
  • 1/4 tsp. kosher salt
  • Optional: fresh cilantro as garnish

Instructions

  • In medium bowl, mix together chicken and celery.
  • In small bowl, mix together mayonnaise, onion, curry, pepper, and salt.
  • Pour curry mixture over chicken and stir until evenly coated. Cover and refrigerate for at least one hour to overnight. Add more salt and/or pepper as necessary.
  • Serve with crackers, on croissants w/green lettuce, or as a lettuce wrap in leaves such as bibb, butter, or romaine. Enjoy!
