- 2 Tbsp. olive oil
- 4 skinless, boneless chicken breasts
- 1 Tbsp. Italian seasoning
- 2 tsp. dried thyme
- 1 tsp. black pepper
- 2 Tbsp. butter
- 8 oz. portabella mushrooms, sliced
- 1/4 tsp. garlic powder (or more to taste)
- 3 cups fresh spinach
- 8 oz. cream cheese, cubed to melt faster
- 1/2 cup chicken broth
- 1/2 cup heavy whipping cream
- 1/2 cup grated parmesan cheese
- 1 cup shredded mozzarella cheese
Heat oil in a large saucepan over medium-high heat. Meanwhile, season both sides of chicken with Italian seasoning, thyme, and pepper. Sear each side of chicken for 3 minutes each. Place chicken in greased baking dish.
Reduce heat on stove to medium. Add butter. Sauté mushrooms for 3 minutes. Add garlic powder and spinach. Stir and cook until spinach is wilted.Preheat oven to 350°. Stir in cream cheese, broth, cream, and parmesan cheese. Bring to a low simmer. Stir until everything is melted (8-10 minutes), then pour over chicken. Sprinkle mozzarella cheese over top. Bake for 20 minutes or until chicken is done. Chicken is done when a meat thermometer inserted in the thickest portion reads 165°.
Serve over mashed potatoes, pasta, or rice. Enjoy!
