Making Chicken in Mushroom Sauce

Step 1: Season Like You Mean It

Season both sides of the chicken breasts with black pepper, dried thyme, and Italian seasoning. Be confident. Chicken can sense fear.

Step 2: Sear for Flavor (and Drama)

Heat oil in a saucepan over medium-high heat. Sear chicken breasts for 3 minutes per side until lightly golden.
Remove chicken and place it into a greased baking dish. Do not worryโ€”it will finish cooking later like a responsible adult.

Step 3: Mushroom Magic

In the same saucepan (do not wash itโ€”those brown bits are flavor), add butter and sautรฉ the sliced portabella mushrooms for about 3 minutes, stirring frequently.

Add garlic powder and spinach. Cook until spinach wilts and dramatically shrinks to 10% of its former self.

Step 4: Make It Creamy (The Best Part)

Stir in:

  • Chicken broth
  • Heavy whipping cream
  • Cream cheese
  • Parmesan cheese

Cook until everything melts together and starts to simmer gently, looking like something youโ€™d gladly eat with a spoon. Give it 8-10 minutes, or so.

Step 5: Assemble & Bake

Pour the mushroom sauce over the chicken in the baking dish.
Top generously with mozzarella cheeseโ€”because restraint is overrated.

Bake at 350ยฐF for 20 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
