  2. Cream the butter and sweetener together until smooth and slightly fluffy, about 1โ€“2 minutes.
  3. Beat in the egg, egg white, and vanilla until fully incorporated.
  4. In a separate bowl, whisk together the almond flour, coconut flour, baking soda, baking powder, and salt.
  5. Add the dry ingredients to the wet mixture and mix until a soft, scoopable dough forms.
    • The dough should not look greasy.
    • If it feels too soft, let it rest 5โ€“10 minutes to hydrate (no refrigeration required).
  6. Scoop rounded tablespoon-sized balls, gently roll them, and place on the prepared baking sheet.
  7. Press a “thumbprint” into the center of each cookie. If not your thumb, this can be a knuckle, the back of a 1/2 teaspoon, or your middle finger. LOL Oh, the possibilities.
  8. Bake for 12โ€“14 minutes, until the edges are set and lightly golden.
  9. Remove from the oven and spoon ยฝ teaspoon sugar-free jam into each indentation.
  10. Return the cookies to the oven and bake an additional 5โ€“7 minutes, until fully set.
  11. Let cookies cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely.

NOTE: Keto cookies firm up as they cool. Do not panic while theyโ€™re warm. Panic later if necessary โ€” but you wonโ€™t need to.
