Making Keto Thumbprint Cookies
- Preheat your oven to 325ยฐF and line a baking sheet with parchment paper.
- Cream the butter and sweetener together until smooth and slightly fluffy, about 1โ2 minutes.
- Beat in the egg, egg white, and vanilla until fully incorporated.
- In a separate bowl, whisk together the almond flour, coconut flour, baking soda, baking powder, and salt.
- Add the dry ingredients to the wet mixture and mix until a soft, scoopable dough forms.
- The dough should not look greasy.
- If it feels too soft, let it rest 5โ10 minutes to hydrate (no refrigeration required).
- Scoop rounded tablespoon-sized balls, gently roll them, and place on the prepared baking sheet.
- Press a “thumbprint” into the center of each cookie. If not your thumb, this can be a knuckle, the back of a 1/2 teaspoon, or your middle finger. LOL Oh, the possibilities.
- Bake for 12โ14 minutes, until the edges are set and lightly golden.
- Remove from the oven and spoon ยฝ teaspoon sugar-free jam into each indentation.
- Return the cookies to the oven and bake an additional 5โ7 minutes, until fully set.
- Let cookies cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
NOTE: Keto cookies firm up as they cool. Do not panic while theyโre warm. Panic later if necessary โ but you wonโt need to.
