This is one of those beautiful set-it-and-forget-it recipes, which we all love. For instance, there’s no browning or prep work needed beforehand. You literally dump the ingredients, then go about your day. Yay!
First, place the chicken breasts in the bottom of the slow cooker, then sprinkle the Ranch seasoning evenly over the top.
Next, add the jar of pepperoncini peppers. This is where a lot of the “zest” comes into the recipe. Purchase either mild, medium, or hot, depending on how zesty you prefer it. The Ranch seasoning gives it more of a “zing,” but that would have made a weird recipe name–Slow Cooker Zingy Chicken.
Then, cube the butter and cream cheese and place them evenly over the top. As everything cooks, they will melt.

Time to cook. Set your slow cooker on LOW (preferred setting) for 6 – 7 hours, or on HIGH for 3 – 4 hours if you don’t have the time.
Chicken is done when a meat thermometer is inserted in the thickest part and reads 165ยฐF. Additionally, the meat should also be white, and the juices should run clear.
When the chicken is done, shred the chicken with two forks directly in the slow cooker. Stir everything together until evenly coated and well combined.

Ingredients
- 1 1/2 lbs. skinless, boneless chicken breast (or skinless, boneless chicken thigh)
- 1 oz. packet Ranch seasoning mix (approx. 3 tablespoons)
- 16 oz. jar pepperoncini peppers, including the juice
- 4 oz. cream cheese, cubed
- 2 Tbsp. butter, cubed
Instructions
- Place the chicken in the bottom of the slow cooker. Sprinkle the Ranch seasoning over the top.
- Add the jar of pepperoncini peppers with all of the juice.
- Place the cubed cream cheese and butter evenly over the top. Cover. Cook on LOW heat (preferred setting) for 6 – 7 hours, or on HIGH for 3- 4 hours.
- Shred the chicken in the slow cooker using two forks. Stir and serve. Enjoy!
