Slow Cooker Beef Roast
Nothing fussy here, just great food and delicious aromas filling the kitchen. Slow Cooker Beef Roast is easily made in your crock pot by adding the ingredients, then set it and forget it. No browning first, nothing to do in the middle…simple and scrumptious.
This beef roast is perfect over mashed potatoes or rice, made into tacos, or use it as an enchilada filling. It’s flexible and delectable.
The delicious river gravy is made from the natural juices of the roast, a stick of butter, and the juice from the pepperoncini. You can thicken it if you want to, but I didn’t bother; it was great as it was.
Making Slow Cooker Beef Roast
Start by lining your crock pot with a liner, if you use them. I love them, because it makes clean-up so much easier.
Next, season both sides of your Chuck roast with salt, pepper, and garlic powder. Place the roast in the crock pot.
Quick Note: I’ve also made this with a tri-tip, which turned out delicious, as well.
Empty the envelope of Au Jus gravy over the roast, then do the same thing with the Ranch envelope.
Then, add the butter. Either set it on top whole, or slice it like I did.
Heard of Pepperoncini?
Last ingredient in this recipe is the pepperoncini, as it’s called in the United States. They’re a sweet Italian chili pepper also known as the “Golden Greek pepper”, “Sweet Italian pepper”, or “Tuscan pepper”.
Without measuring too closely, I added half of a 16 fl. oz. jar, peppers and the juice. Place the peppers right on top, then pour the juice right on top. Nothing fancy here, no mixing, no measuring.
This is the kind of recipe we all need when we’re busy.
Close the lid and set the crock pot on LOW for eight hours. Set it and forget it. Cute saying, but yeah, really, just forget about it. Go play.
Serving Beef Roast
After it’s done, decide on how you want to serve it. You have choices.
First, either shred it or try to keep it in larger pieces. Keep in mind, it’s going to be super tender and fall apart on you.
I won’t be able to think of probably even half of the ways to serve this dish, but I’ll give it a try. The most obvious ones are pairing the roast with mashed potatoes or rice. Yummy!
Serve it over egg noodles or in a bowl with couscous, or other pasta.
Keep it simple, eat it plain.
Serve in tacos, or as filling for enchiladas or burritos. I’ve already bought the tortillas for that one.
Use the meat and pepperoncini in sandwiches with mayo and some cheese. Oh, that sounds so good right now. Mom use to give us leftover roast in our sandwiches.

Ingredients
- 3 lb. Chuck roast
- salt, black pepper, and garlic powder to taste
- 1 oz. envelope Au Jus gravy
- 1 oz. envelope Ranch seasoning
- 1/2 cup butter (1 stick) roughly sliced into 6 – 8 pieces
- 8 oz. pepperoncini (peppers and the juice) medium heat
Instructions
- Line your crock pot if you use liners.
- Season both sides of Chuck roast with salt, pepper, and garlic powder. Place roast in crock pot.
- Sprinkle envelopes of Au Jus gravy and Ranch seasoning over roast. Place pieces of butter across top of roast. Add pepperoncini over top.
- Cover. Set crock pot on LOW for 8 hours. Enjoy!
