Slow Cooker Green Chili Chicken
Slow Cooker Green Chili Chicken is fall-apart-tender and super moist cooking in its own gravy. Serve it with mashed potatoes, pasta, or have it in a rice bowl. It’s also delicious in burritos or enchiladas, or make some chicken tacos.
I love a dish that makes a lot, so I can eat some, freeze some. Some days it’s just nice to have something in the freezer when you don’t feel like cooking.
Also, this chicken dish makes its own gravy, which is a plus, but it’s also flexible in how you serve it, and how spicy you make it. Check it out.
Making Slow Cooker Green Chili Chicken
Start by lining your crock pot, if you use liners. I love them, because I don’t love cleaning.
So, this is really easy, too, did I mention that part?
Mix everything together in the crock pot, except for the chicken. It’s easier to stir everything together without the chicken in the way.
So, throw in your spices, garlic, onion, green chilies, chicken broth, and sour cream. In a separate little bowl, mix together the flour and water, then throw that in, too.
Once everything except the chicken is in the crock pot, stir it well.
Then, add the chicken. Dip it in the sauce, then flip it over to coat both sides.
Cover and set on HIGH for four hours. Easily shred the chicken with two forks, then have at it.
Serving Time
As mentioned above, this chicken dish goes great with Classic Mashed Potatoes, because it makes its own gravy. Yummy! It’s also good over pasta, for the same reason.
I love tacos, so any time there’s a reason to have them, I’m game. I added some cheese and a bit of hot sauce and called it a day.
With a little cheese, this would also make a great burrito or enchilada filling. Just throwing some ideas at you.
Spicing it UP
For those of you who like to sweat when you eat, you can spice this chicken dish up. Use hot green chilies, add jalapeños, or crushed red pepper.
Those are as hot as I go, so if you like it hotter than that, you likely already know more than I do about hot peppers and spices. I’ll leave you to it. LOL

Slow Cooker Green Chili Chicken
Ingredients
- 2 tsp. chili powder
- 1 tsp. black pepper
- 1 tsp. ground cumin
- 1 tsp. salt
- 3 garlic cloves, minced
- 1 small onion, chopped
- 7 oz. can diced green chilies
- 1 cup chicken broth
- 1/2 cup sour cream
- 2 Tbsp. all-purpose flour
- 2 Tbsp. water
- 3-4 skinless boneless chicken breasts
Instructions
- Line your crock pot if you use liners.
- To the crock pot, add everything from the chili powder to the sour cream.
- In a small bowl, mix the flour and water until smooth; no lumps remain. Add this to the crock pot. Stir until well combined.
- Dip each chicken breast in the sauce, then flip it over to evenly coat. Cover. Cook on HIGH for 4 hours. Using 2 forks, easily shred chicken. Enjoy!
