Slow Cooker Chicken and Pasta

Crock pots are awesome. Throw raw food in, then poof…it’s cooked. Set it, forget it. The best part? Your whole kitchen smells fabulous, plus now you have four hours to play.

The combination of chicken broth, Italian dressing, and cream cheese create your sauce. That sauce is both rich and tangy. Yummy!

The chicken is super tender, falls apart, and then we add cheese. Yes, beautiful tasty cheese.

It’s the kind of recipe that does not need exact measurements. For instance, if you want more chicken, add it. If you don’t have a full bottle of Italian dressing, make up the difference with water.

Ok then, let’s get started.

Making Slow Cooker Chicken and Pasta

Line your crock pot with a liner, if you’re so inclined. It makes for easier cleanup.

Ok, add the Italian dressing, broth, Parmesan cheese, and crushed red pepper to the crock pot. Stir.

Salt and pepper both sides or your chicken breast, then lay the chicken right in the sauce.

Place the brick of cream cheese on top, then cover and set your timer on HIGH for four hours.

Slow Cooker Chicken and Pasta has an amazing sauce made from cream cheese, Italian dressing, and chicken broth.

Shortly before the chicken is done, when there’s about 15 minutes left, cook the box of pasta until al dente.

Quick note: if you like your meals saucier, reduce the amount of pasta to 3/4 lb. You don’t need to measure this, just eye-ball it. Also, don’t add more than one pound pasta, it would likely make the dish too dry.

Then, while the cooked pasta is draining, uncover the chicken and roughly shred it with two forks. By shredding the chicken, the cream cheese automatically gets stirred in.

Next, stir in the cup of Monterey Jack cheese, then stir in the pasta until well coated.

Re-cover and cook on LOW for another 15 minutes allowing time for the cheese to thoroughly melt, and the pasta to absorb some of the sauce.

Garnish with some fresh sweet basil (or parsley) for a spot of color and flavor.

Ingredients

  • 16 oz. jar Italian dressing (like Ken's Steak House)
  • 1 cup chicken broth
  • 1/4 cup Parmesan cheese
  • 1 tsp. crushed red pepper
  • salt and pepper
  • 3 chicken breasts (or 4 small)
  • 8 oz. cream cheese
  • 1 lb. uncooked pasta
  • 1 cup Monterey Jack or Mozzarella cheese
  • fresh basil for garnish (optional)

Instructions

  • Combine the Italian dressing, broth, Parmesan cheese, and crushed red pepper in crock pot. Stir.
  • Salt and pepper both sides of chicken, then lay chicken in the crock pot. Lay cream cheese on top. Cover.
  • Set timer on HIGH for 4 hours.
  • Shortly before chicken is done, cook the pasta according to package directions until al dente.
  • While you drain the cooked pasta, remove the lid from the crock pot and roughly shred the chicken with 2 forks. The cream cheese gets mixed in as your shred. Stir in the Monterey Jack cheese. Add the pasta, stir to coat, then cover.
  • Heat on LOW for 15 minutes. Garnish with fresh basil, which is optional. Enjoy!

    I know I’ve said a time or two “This is my favorite recipe”. But for reals THIS is my favorite recipe and so easy to make. And I usually have these ingredients on hand. My husband who is pretty basic when it comes to food was eating this chicken pasta like it was going out of style. My one year old grandson was devouring it as well. If I could give it more than five stars I definitely would!!
