Materials

  • 1/3 cup unsalted butter, softened
  • 1/2 cup erythritol confectioners (by Swerve)
  • 1 tsp. vanilla extract
  • 1 large egg + 1 egg white
  • 1 cup almond flour
  • 3 Tbsp. coconut flour
  • 1/4 tsp. baking soda
  • 1/4 tsp. baking powder
  • 1/8 tsp. salt
  • 3 Tbsp. sugar-free jam (for filling)

Instructions

  • Preheat oven to 325° and line baking sheet with parchment paper.
  • In large bowl, cream butter and confectioners until light and fluffy (1-2 minutes). Beat in the egg, egg white, and vanilla until fully incorporated.
  • In separate bowl, whisk together the almond flour, coconut flour, baking soda, baking powder, and salt. Add the dry ingredients to the wet mixture and mix until a soft, scoopable dough forms.
  • Scoop rounded tablespoon-sized balls, gently roll them, and place on baking sheet. Press a "thumbprint" into the center of each cookie.
  • Bake for 12-14 minutes, until edges are set and lightly golden. Remove from oven and spoon 1/2 teaspoon jam into each indentation. Return cookies to oven and bake an additional 5-7 minutes.
  • Let cookies cool on baking sheet for 10 minutes, then transfer to wire rack to cool completely. Enjoy!
