- 1/3 cup unsalted butter, softened
- 1/2 cup erythritol confectioners (by Swerve)
- 1 tsp. vanilla extract
- 1 large egg + 1 egg white
- 1 cup almond flour
- 3 Tbsp. coconut flour
- 1/4 tsp. baking soda
- 1/4 tsp. baking powder
- 1/8 tsp. salt
- 3 Tbsp. sugar-free jam (for filling)
Preheat oven to 325° and line baking sheet with parchment paper.
In large bowl, cream butter and confectioners until light and fluffy (1-2 minutes). Beat in the egg, egg white, and vanilla until fully incorporated.
In separate bowl, whisk together the almond flour, coconut flour, baking soda, baking powder, and salt. Add the dry ingredients to the wet mixture and mix until a soft, scoopable dough forms.
Scoop rounded tablespoon-sized balls, gently roll them, and place on baking sheet. Press a "thumbprint" into the center of each cookie.
Bake for 12-14 minutes, until edges are set and lightly golden. Remove from oven and spoon 1/2 teaspoon jam into each indentation. Return cookies to oven and bake an additional 5-7 minutes.
Let cookies cool on baking sheet for 10 minutes, then transfer to wire rack to cool completely. Enjoy!
