Egg Roll in a Bowl
Healthy, loaded with flavor, and easy to make; that’s my kind of meal. Egg Roll in a Bowl has seasoned ground beef (or turkey) with cabbage and a scrambled egg. Deliciously seasoned with garlic, ginger, and sesame oil for a great meal. Eat it in a bowl, over rice or noodles, or in a lettuce wrap.

Whether you’re looking for healthy, Keto, low calorie, or just an easy dinner, this recipe is for you. It seriously tastes great while it ticks off a lot of boxes for healthy diets.
For the Keto followers, wrap it up in lettuce leaves or serve it plain.
If carbs aren’t a problem, however, have it over jasmine rice or your favorite pasta.
However you serve it, it’s loaded with flavor and simple to make.

Making Egg Roll in a Bowl
In a large wok, brown the ground beef (or turkey). While it’s cooking, salt and pepper it to taste, then drain off the extra fat.
Next, stir in the soy sauce (or coco aminos), garlic, rice wine vinegar, and ginger. For the ginger, I’ll usually buy the ginger paste in the produce section, or you can use fresh grated ginger.
Cook for another 2 minutes, then add the cabbage and stir. The cabbage will fill your pot, but it reduces in size as you go.
Next, reduce the heat to low and cover to soften the cabbage, stir occasionally. This takes approx. 10 minutes.
While that’s cooking, you can prepare your lettuce leaves, pasta, or rice.

After cooking for 10 minutes, make a well in the center of the mixture by pushing the cabbage mixture to the sides. This is where you will cook the egg.
Lightly scramble an egg, then pour it into the well you just made. As it cooks, gently stir until fully cooked, then stir it into the rest of the mixture.
Lastly, drizzle the sesame oil over the top along with the optional sriracha sauce. Give it one last stir, then sprinkle the green onions over the top and serve.

Ingredients
- 1 lb. lean ground beef (or ground turkey)
- salt and pepper to taste
- 1/4 cup soy sauce (or Coco Aminos)
- 1 tsp. garlic clove, minced
- 1 Tbsp. rice wine vinegar
- 1 tsp. ginger, fresh grated, or paste
- 6 cups shredded tri-colored cabbage
- 1 egg
- 2 Tbsp. sesame oil
- 1 green onion, chopped
- OPTIONAL: sriracha sauce
Instructions
- In a large wok or Dutch oven, brown the beef. Salt and pepper to taste. Drain excess fat.
- Stir in soy sauce, garlic, rice wine vinegar, and ginger. Cook for another 2 minutes. Add cabbage and stir. Reduce heat to low and cover to soften cabbage, stir occasionally. This takes approx. 10 minutes.
- Make a well in center of pan by pushing ingredients to the side. Pour in egg. Scramble egg in well until cooked, then stir into rest of ingredients.
- Drizzle sesame oil and optional sriracha sauce over top and stir. Sprinkle green onion over top and serve.
- Serving suggestions: serve in a bowl plain, or over rice or pasta. Also, serve as lettuce wraps using Romaine or butterhead lettuce leaves. Enjoy!

I made this for dinner and served it with pan fried frozen wontons. The recipe was so easy to follow. I would say it was pretty foolproof. I definitely would not skip on the ginger or the sesame oil as they added a lot of rich flavor. There were plenty of leftovers and I’m lookin forward to packing some for lunch tomorrow. In addition to sriracha sauce I added a little Mae Ploy sauce. So delicious.
