Bacon Cheeseburger Casserole
This Bacon Cheeseburger Casserole tastes just like a yummy burger, but without the bun. It’s perfect for anyone looking for low-carb or Keto recipes. You can add a bun, of course, but this deep-dish casserole is hearty and delicious just as is.

Flavored with ground beef, onions, and lots of delicious cheddar cheese, this casserole will make you happy.
It’s easy to throw together, then just pop it in the oven for 30 minutes.
Eat it plain with a side salad, or serve it on toast as an open-faced sandwich, or throw it between two buns like a sloppy Joe. It actually holds together better than a sloppy Joe, more like a meatloaf.
Re-heating it is a synch, just microwave it, or warm it in a covered pan with a little water to steam it.
For extra cheesy, gooey goodness, make sure to shred your brick of cheese instead of using pre-shredded cheese.
Pre-shredded cheese has that light coating of starch on it, that keeps the cheese from sticking together in the package, which is a good thing. That extra additive, however, also keeps the cheese from reaching it’s true gooey potential.
This recipe is similar to my Easy Bacon Cheeseburger Pie, but this casserole recipe comes with 10 grams fewer carbs.

Making Bacon Cheeseburger Casserole
This recipe best fits in an 8 x 8,” 9 x 9,” or a 7 x 11″ baking dish. You can also double the recipe and make it in a 13 x 9″ dish, which is what I wish I had done. I could have eaten the first half, and frozen the second half.
Oh, well…next time.
First off, you need to cook up the bacon, so get that going.
I like Easy Baked Bacon, because it’s out of my way (in the oven) while I’m making the rest of it on the stove top.
Meanwhile, in a large pan, cook the ground beef, onions, and garlic on medium-high heat until browned and crumbly. Season with salt and pepper, stirring often.
Drain off any fat, then pour into your baking dish.

Next, chop your cooked bacon and mix that into the beef mixture along with one cup cheddar cheese. Save the remaining 1/2 cup cheese for the top.
Then, in a separate bowl, whisk together the eggs and cream and stir that into the beef mixture.
Sprinkle the remaining cheese over the top and bake for 30 – 35 minutes. The top should just be browning, and the cheese should be nice and bubbly.
Time to eat!

Serving
What better to serve Bacon Cheeseburger Casserole with than Mini Mashed Tator Tots. I mean, c’mon!
Or, have some Oven Roasted Asparagus or my favorite, Buttered Parmesan Broccoli, in keeping with a low-carb diet.
Alternatively, have your casserole over a piece of buttered toast for an open sandwich, or heck, throw it between two pieces of bread for a full sandwich.
This is also delicious served with a side of Homemade Mac and Cheese or Sweet Potato Mash.

Bacon Cheeseburger Casserole
Ingredients
- 1/2 lb. bacon, cooked and chopped
- 1 lb. ground beef
- 1/2 onion, chopped
- 1 garlic clove, minced
- salt and black pepper to taste
- 1 1/2 cups cheddar cheese, shredded and divided
- 4 large eggs
- 1/2 cup heavy whipping cream
Instructions
- Preheat oven to 350°.
- Cook the bacon until crispy, then chop and set aside.
- Meanwhile, in large pan, cook ground beef, onion, and garlic on medium-high heat. Season with salt and pepper. Stir often, cook until browned and crumbly. Drain and discard excess fat. Pour beef mixture into 8 x 8" baking dish.
- Add chopped bacon and 1 cup of cheddar cheese. Stir.
- In separate bowl, whisk together eggs and cream. Pour over beef mixture and stir to combine. Top with remaining cheese.
- Bake uncovered for 30 – 35 minutes, or until top is just starting to brown and cheese is bubbly. Enjoy!
