Lemon Meltaway Cookies

Lemon Meltaway Cookies are a delicate little frosted dessert with that subtle lemon flavor we all love. They’re thoroughly munchable as a good cookie should be, but they’re also small and lovely. These cookies remind me of an old fashioned cookie you would serve with tea or crustless cucumber sandwiches.

These cookies are delicate and fragile, but that’s why they melt in your mouth.

That’s also why we frost them; the frosting helps to hold them together. The frosting also comes with delicious lemon flavor from the fresh lemon juice and zest. Yummy!

Making Lemon Meltaway Cookies

You’ll need to chill the cookie dough once you’ve made it, so keep that in mind when making them.

The lemon cookie dough

Using a stand mixer or hand-held mixer, beat the butter until light and fluffy.

Next, add in the cornstarch, powdered sugar, lemon juice, and lemon zest. Mix thoroughly.

Then, stir in the flour just until mixed. Do not over mix or you’ll end up with hockey pucks.

This is your cookie dough.

Lemon Meltaway Cookies are a great dessert to have with tea or finger sandwiches.

Divide the cookie dough in half, then shape each half into 8″ logs. You can make them square or round, triangular even; whatever you’re into.

Wrap each log with plastic wrap and refrigerate for 2 hours, or overnight.

When you’re ready to bake them, preheat the oven to 350°.

Cut the logs into 1/4″ cookies and place them about 2″ apart on ungreased cookie sheets.

Bake for 8 – 12 minutes, or until set. These particular cookies will not brown, so you have to watch the time.

Let them cool on the cookie sheet for a few minutes, then carefully remove them to a wire rack to cool completely.

Fresh lemons are used to flavor both the cookie and frosting in this recipe.

Lemon Cookie Frosting

Before making the frosting, decide on if you’re going to spread it on, or pipe it on. The difference is in the lemon zest.

Lemon zest will plug your piping tip, so only add the zest if spreading the frosting on the cookies.

So, to make the frosting, add everything into a medium bowl and beat on LOW until thoroughly mixed. Scrape the sides, then speed up the beaters for a couple minutes on MEDIUM.

Ingredients

Cookies:

  • 3/4 cup salted butter, softened
  • 1/2 cup cornstarch
  • 1/3 cup powdered sugar
  • 1 Tbsp. fresh lemon juice
  • 1 tsp. grated lemon peel
  • 1 1/4 cups all-purpose flour

Frosting:

  • 3/4 cup powdered sugar
  • 1/4 cup salted butter, softened
  • 1 tsp. fresh lemon juice
  • 1 tsp. grated lemon peel (see Notes below)

Instructions

Cookies:

  • In a large bowl, beat the butter until light and fluffy. Add in the cornstarch, powdered sugar, lemon juice, and lemon zest; mix until combined. With beaters on LOW, mix in the flour until combined.
  • Divide the cookie dough in half. Shape each half into an 8" roll and wrap with plastic wrap or waxed paper. Chill for 2 hours, or overnight.
  • Preheat oven to 350°. With sharp knife, cut each roll into 1/4" slices. Place 2" apart on ungreased cookie sheet. Bake for 8 – 12 minutes, or until set. (Cookies will not brown.) Cool completely on wire rack.

Frosting:

  • Mix all frosting ingredients on LOW to mix, then once mixed, speed up to MEDIUM until fully combined and fluffy, scraping sides as you go. Spread over cooled cookies. Enjoy!

Notes

*If you plan on piping your frosting onto the cookies, don’t use the grated lemon peel, because it will get stuck in your frosting tip. Rather, double the fresh lemon juice.
Also, if you plan on frosting the cookies with a piping tip, I recommend doubling the frosting recipe. Otherwise, the recipe is enough to simply spread on the cookies.
