Cucumber Mint Highballs
Perfect for a hot summer day, Cucumber Mint Highballs offer adults a cool refreshing drink. The fresh cucumbers and mint blend beautifully together in your glass muddled with the ice cubes. Then add in the fun: Smirnoff’s Zero Sugar Infusions Cucumber & Lime vodka with a Diet Sprite mixer for a quick and easy highball that is also sugar free. The bright citrus notes of lime from the vodka and mixer make it a summertime favorite.
How cool is it to have a zero sugar drink with alcohol in it?! Usually booze is loaded with sugar, but not in Cucumber Mint Highballs.Smirnoff has a Zero Sugar line of vodka that tastes amazing.
Using the diet mixer keeps it sugar free, or you can mix it with another favorite soda. Sprite Ginger is also delicious with the vodka, but I didn’t see it in diet form. The fresh cucumbers and mint not only make the glass look pretty, but they add a crisp cool flavor.
As a side note, cucumbers do have a trace amount of sugar in them, so it’s technically not sugar free. Still, it’s darn close.
What IS a highball?
A highball is a drink with an alcoholic base spirit mixed with a larger portion non-alcoholic mixer. Typical non-alcoholic mixers would include water, soda, juice, etc.
In addition, these drinks are usually served in a highball glass. That would be a tumbler that holds between 8 and 12 fluid ounces. It’s taller than an Old Fashioned glass, and shorter and wider than a Collins glass…in case you were about to ask. LOL
The Making of a Highball
Muddle the mint leaves with the ice cubes in a tumbler. Put about 2″ of ice in each glass as you press cucumber slices to the inside walls of the glass. Add more ice to hold the cucumbers in place and continue alternating the two until the glass is full of ice and all your cucumber slices.
Pour in your shot of vodka and top the glass off with the diet soda (sugar-free version), and gently stir. Decorate with a sprig of mint and another slice of cucumber on the edge of the glass and enjoy! Quick and easy, no fuss…just like a good highball should be.
Cucumber Mint Highballs
Ingredients
- 1 Tbsp. mint leaves, plus sprig
- ice cubes
- 1 oz. Smirnoff Zero Sugar Infusions Cucumber & Lime vodka
- 5 oz. diet Sprite soda (or other lemon/lime soda)
- 9 slices cucumber
Instructions
- In a tumbler, muddle ice cubes and mint leaves. Add 2" of ice and press sliced cucumbers on inside walls of highball glass. Continue alternating ice with cucumber slices until an inch from top of glass. Use 8 slices of cucumber total. (The ice cubes will hold the cucumber in place.)
- Add vodka to glass followed by soda. Stir gently.
- Decorate with additional slice of cucumber and mint sprig. Enjoy!
