Strawberry Mojitos
Strawberry Mojitos are that cool, refreshing cocktail that hits the spot on a hot summer day. The fresh mint, together with the strawberry simple syrup and white rum, is a delicious combination. Add some ice and a splash of club soda, then CHEERS!
I think of Strawberry Mojitos as a pool-side drink, or something I would have on a special occasion. Something to enhance the moment, if you will. In fact, where’s my little umbrella?
The sweetness from the Strawberry Simple Syrup with the white rum and fresh mint is such a pleasure — I love sharing this recipe.
It runs along the lines of my Watermelon Vodka Highballs and Cucumber Mint Highballs, also Pomegranate Ranch Water. All cool and refreshing, with an adult twist.
Making Strawberry Mojitos
This drink is easier to make if you have a shaker, but if not, make it in a glass or jar that you can cover and shake.
Start with fresh mint leaves. Throw a few (3 or 4 depending on size) into the shaker.
Then add the Strawberry Simple Syrup. You can get the recipe HERE.
Muddle the mint leaves with the syrup using a cocktail muddler or back of a spoon.
To muddle the leaves means to mash down on them, thereby releasing its flavor.
Then add your white rum, lime juice, and enough ice to fill the shaker.
Shake, shake, shake for about 15 seconds, then you have a choice.
I love choices, unless there’s too many choices, but that’s not this.
You have two choices.
Choice #1
Your first choice is to strain the drink from the shaker into a glass filled with ice, thereby straining out the mint leaves.
This creates a clearer drink and nothing gets stuck in your straw while you’re drinking it.
Top off the glass with a splash of club soda and garnish with fresh mint, a wedge of lime, and/or a strawberry.
Choice #2
The second choice is to pour everything from the shaker directly into your glass.
This includes the mint leaves and ice cubes, so make sure not to add ice first.
Then, top off the glass with club soda and garnish.
The second choice has the mint leaves in the drink, which can get stuck in your straw, but it tastes better.
The leaves that keep on giving.
Well, I think it tastes better. I’d rather have to play with my straw a bit if it meant it tasted better.
The fresh mint leaves keep on giving flavor, so I keep them.
Either way you make this drink, it’s going to be scrumptious.
Garnishing Strawberry Mojitos
Another choice you can make is to add sliced fresh strawberries into the drink.
Oh, or a slice of lime. I did that here, in these pictures.
So, to simplify, you can either have a clean/clear drink, or throw in the mint leaves, sliced strawberries, and/or a slice of lime.
One is crystal clear, the other looks more like a fruit salad.
I love the color and interest the additions make, plus the added flavor, but a clear glass is classy, elegant looking.

Strawberry Mojitos
Ingredients
- 4 fresh mint leaves
- 1/4 cup strawberry simple syrup*
- 1/4 cup white rum
- 2 Tbsp. lime juice
- ice cubes to fill a glass
- Optional Garnish: fresh mint leaves, a strawberry, wedge or slice of lime
Instructions
- In a cocktail shaker, muddle the mint leaves with the strawberry simple syrup.
- Add the rum, lime juice, and enough ice to fill the shaker.
- Shake for 15 seconds.
- Then, either strain into a glass filled with ice or pour contents directly into empty glass. Top with club soda and garnish with fresh mint leaves, a strawberry, and/or a wedge or slice of lime. Enjoy!
