Oven Roasted Asparagus
Looking for a healthy, easy side dish that tastes great? I’ve got you covered with Oven Roasted Asparagus. It’s tender, perfectly seasoned, and really simple to make.
Easy to make, easy to clean up. Lay some foil down on your baking sheet for easy cleanup, then make everything right there on the foil.
Pop them into the oven for 15 – 20 minutes, and they’re ready. Focus the rest of your attention making whatever else you want to serve with it. Sound good? Let’s go.
Making Oven Roasted Asparagus
First, line your baking sheet with foil, then set aside.
Cut the thick ends from the asparagus spears, commonly called the woody ends, which is usually the bottom 2 – 3 inches.
If you’re not sure where to cut, there’s a simple rule of thumb you can use. Take a stalk of asparagus and hold from both ends. Bend it until it snaps. It will naturally snap where it starts to get tough. Then cut the rest of the bunch to the same length.
Next, lay the asparagus on the foil.
Drizzle the olive oil and lemon juice over the spears, then sprinkle the minced garlic, garlic powder, and salt over the top. Yes, you read that right; 2 different forms of garlic, which lends to depth of flavor.
Then, using your hands, gently stir so that the spears are evenly coated. Make sure they’re in a single layer and not overlapping.
Pop into a preheated oven set at 400° and set your timer as follows:
- for thick spears, 15 – 20 minutes
- for medium spears, 10 – 15 minutes
- for thin spears, 8 – 10 minutes
Poke the asparagus with a fork to see if tender. Once tender, serve immediately and enjoy.
Serving
Keeping it easy, serve hot asparagus as is. Getting fancy, garnish with lemon wedges and chopped fresh parsley.
If you’ve ever read my blog before, you know I recommend a pat of butter on top. So yummy!
To mix things up, it’s delicious served with a hollandaise sauce over the top, or a sprinkle of Parmesan cheese. Lemon zest is not only pretty, but it adds delicious flavor.
Grated ginger is fantastic with asparagus, which you can add before you roast.
Also, you can use any combination of seasonings that you love.
Serve with grilled fish or lamb, chicken, beef, or pork. It’s delicious, flexible, and easy to make.

My Collected Recipes: A quick mention of this wonderful blank recipe book that I helped to create with a very dear friend. Write in one or more recipes before giving it to that special person, then they can fill the remaining pages with their favorites, and/or have other special people write out recipes for them. It’s personal, and yes, it takes time and effort — something we’ve gotten away from with all this technology. Check it out HERE where you can order a hard or soft cover. Once there, click on READ SAMPLE to see the pages within. I especially like the “measurements and conversions” page. Also, I make no money from any sales, I just love the idea of this book. Missing my mom as I do, seeing her handwriting always makes me feel closer to her. Give that gift to someone else by writing out a favorite recipe.
This is really good, makes me feel good too.
Awesome, thanks Matt. We are what we eat. LOL
