Slow Cooker Tuscan Chicken
Slow Cooker Tuscan Chicken has tender, fall-apart chicken slow cooked in a creamy, seasoned sauce. Flavored with sun dried tomatoes and Parmesan cheese, it’s easy to make and serve over your favorite pasta.

Chicken made in a crock pot is slow cooked to perfection every time. I count on it, and so far, I haven’t been disappointed.
That’s why I love this recipe; I can set it and forget it.
So, let’s get started.

Making Slow Cooker Tuscan Chicken
Slow Cooker liners, which are optional, are a great hack if you want to do less cleaning. Insert one into your crock pot now if you use them.
Next, season both sides of your chicken breasts with the Italian seasoning, salt, black pepper, and paprika. Lay the chicken in the crock pot.
Then, in a medium bowl, make the sauce. Whisk together the cream, Parmesan cheese, corn starch, garlic, salt, and pepper, then stir in sun dried tomatoes.
Pour the sauce over the chicken and cover.

Set the timer on LOW for 6 hours (preferred time) or HIGH for 3 – 4 hours, or until internal temperature of chicken reaches 165°. In other words, it’s time to go outside and play.
Then, stir in the chopped spinach 30 minutes before the chicken is done. Recover and continue cooking for the remaining 30 minutes.
Meanwhile, make your favorite pasta, so that everything’s ready at the same time.
Also, you can use this time to make some Parmesan Garlic Toast, which is the perfect side dish for this meal.
Top it off with some chopped fresh parsley or basil. Beautiful and oh, so delicious.

Ingredients
Chicken:
- 4 skinless, boneless chicken breasts (or skinless, boneless chicken thighs)
- 1 tsp. Italian seasoning
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/4 tsp. paprika
Sauce:
- 1 cup heavy whipping cream
- 1/3 cup Parmesan cheese, grated or shredded
- 1 Tbsp. corn starch
- 2 tsp. garlic, minced
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 1/2 cup sundried tomatoes, chopped (or roasted red peppers)
30 minutes before serving:
- 1 cup fresh spinach, chopped
Instructions
- Line your crock pot with a liner if you use them.
Chicken:
- Season both sides of chicken with Italian seasoning, salt, pepper, and paprika. Place chicken in crock pot.
Sauce:
- In medium bowl, whisk together cream, Parmesan cheese, corn starch, garlic, salt, and pepper. Stir in sun dried tomatoes. Pour sauce over chicken. Cover. Set timer on LOW for 6 hours (preferred time) or HIGH for 3 – 4 hours, or until internal temperature of chicken reaches 165°.
