In large bowl, beat butter, sugar, and vanilla until well combined.
In small bowl, mix flour with cocoa. Gradually add to butter mixture.
On lightly floured surface, roll out dough to 1/4" thickness. Cut out shapes and place 2" apart on ungreased cookie sheet.
Bake for 9 - 11 minutes or until firm. Remove to wire racks to cool.
Dip/drizzle:
In microwave safe bowl, heat vanilla chips and 1 tablespoon shortening until melted, stirring often. (Follow melting instructions on bag of chips.)
Dip cookies into melted chips, then place back onto wire rack or onto waxed paper.
For chocolate drizzle, melt chocolate chips and remaining shortening according to package directions. Stir until smooth and creamy. Drizzle over cookies. Enjoy!
