Materials

  • 1 low-carb tortilla, (approx. 8-inch)
  • 2 Tbsp. "Chive" whipped cream cheese, (or other flavor)
  • 1 1/2 Tbsp. pesto sauce
  • 2 cherry tomatoes, sliced
  • 1 Tbsp. black olives, sliced
  • 1/4 cup cooked chicken, shredded
  • 1/3 cup mozzarella cheese, shredded
  • 2 tsp. butter, melted (or cooking spray)

Instructions

  • Lay out the tortilla on a clean work surface. Spread the cream cheese, then pesto over the tortilla in an even layer.
  • Add the tomatoes, black olives, then chicken in an even layer. Sprinkle cheese over top.
  • Tightly roll tortilla up from one end to the other. Brush the rolled tortilla with melted butter. Cut the roll into 1 - 2-inch thick pinwheels.
  • Line air fryer with parchment paper and carefully place pinwheels on the paper. Air fry at 400° for 6 - 8 minutes, or until golden brown and crispy.
  • To oven bake: preheat oven to 375° and bake for 11 - 13 minutes, or until golden brown. Use broiler if you want added color. Enjoy!
