- 1 low-carb tortilla, (approx. 8-inch)
- 2 Tbsp. "Chive" whipped cream cheese, (or other flavor)
- 1 1/2 Tbsp. pesto sauce
- 2 cherry tomatoes, sliced
- 1 Tbsp. black olives, sliced
- 1/4 cup cooked chicken, shredded
- 1/3 cup mozzarella cheese, shredded
- 2 tsp. butter, melted (or cooking spray)
Lay out the tortilla on a clean work surface. Spread the cream cheese, then pesto over the tortilla in an even layer.
Add the tomatoes, black olives, then chicken in an even layer. Sprinkle cheese over top.
Tightly roll tortilla up from one end to the other. Brush the rolled tortilla with melted butter. Cut the roll into 1 - 2-inch thick pinwheels.
Line air fryer with parchment paper and carefully place pinwheels on the paper. Air fry at 400° for 6 - 8 minutes, or until golden brown and crispy.
To oven bake: preheat oven to 375° and bake for 11 - 13 minutes, or until golden brown. Use broiler if you want added color. Enjoy!
