Materials

  • 2 lbs. ground meat (beef, turkey, or chicken)
  • 1/2 onion, chopped
  • 1 packet sugar-free taco seasoning (such as Dan-O's)
  • 1/4 cup water
  • 16 oz. cottage cheese (full or low fat)
  • 10 oz. can Rotel with green chilies
  • 2 cups cheese (Mexican, cheddar, or Jack) shredded
  • Optional Toppings: sour cream, Greek yogurt, hot sauce, avocado, diced green onions, jalapeños, shredded lettuce, or cilantro.

Instructions

  • Preheat oven to 375°.
  • In Dutch oven, brown meat and onions over medium heat. Once fully cooked, drain any excess fat. Stir in taco seasoning and water. Cook for another 3 minutes.
  • Meanwhile, in a large bowl, mix together the cottage cheese, Rotel, and half the cheese.
  • Spread the cheese mixture over the meat in an even layer. Top with remaining cheese.
  • Bake uncovered for 20 minutes, or until cheese is melted and bubbly.
  • Allow to rest 5 minutes before serving. Serve hot and add your favorite taco toppings. Enjoy!
