- 2 lbs. ground meat (beef, turkey, or chicken)
- 1/2 onion, chopped
- 1 packet sugar-free taco seasoning (such as Dan-O's)
- 1/4 cup water
- 16 oz. cottage cheese (full or low fat)
- 10 oz. can Rotel with green chilies
- 2 cups cheese (Mexican, cheddar, or Jack) shredded
- Optional Toppings: sour cream, Greek yogurt, hot sauce, avocado, diced green onions, jalapeños, shredded lettuce, or cilantro.
Preheat oven to 375°.
In Dutch oven, brown meat and onions over medium heat. Once fully cooked, drain any excess fat. Stir in taco seasoning and water. Cook for another 3 minutes.
Meanwhile, in a large bowl, mix together the cottage cheese, Rotel, and half the cheese.
Spread the cheese mixture over the meat in an even layer. Top with remaining cheese.
Bake uncovered for 20 minutes, or until cheese is melted and bubbly.
Allow to rest 5 minutes before serving. Serve hot and add your favorite taco toppings. Enjoy!
