Making a Keto Taco Casserole
First, preheat your oven to 375ยฐ, then get out your Dutch oven or a large skillet.
Second, brown the ground meat, whichever you used (beef, turkey, or chicken) along with the onions over medium heat. This takes about 10 – 15 minutes depending. Also, while the meat is cooking, break it up into small even pieces. You can use the flat end of a spatula for this. .
Once done, drain any excess fat, then stir in the taco seasoning and water. Continue to cook for another three minutes.

Meanwhile, mix together the cottage cheese, Rotel, and half the shredded cheese. When it comes to cheese, use your favorite, or what you already have in the fridge, which is probably your favorite. In other words, they all taste amazing.
Then, spread the cheese mixture over the meat mixture, and top with the remaining shredded cheese.

Lastly, bake uncovered for 20 minutes, or until the cheese is melted and bubbly. Allow that to rest for five minutes while you prep your favorite taco toppings.

Ingredients
- 2 lbs. ground meat (beef, turkey, or chicken)

- 1 packet sugar-free taco seasoning (such as Dan-O's)
- 1/4 cup water
- 16 oz. cottage cheese (full or low fat)
- 10 oz. can Rotel with green chilies
- 2 cups cheese (Mexican, cheddar, or Jack) shredded
- Optional Toppings: sour cream, Greek yogurt, hot sauce, avocado, diced green onions, jalapeรฑos, shredded lettuce, or cilantro.
Instructions
- Preheat oven to 375ยฐ.
- In Dutch oven, brown meat and onions over medium heat. Once fully cooked, drain any excess fat. Stir in taco seasoning and water. Cook for another 3 minutes.
- Meanwhile, in a large bowl, mix together the cottage cheese, Rotel, and half the cheese.
- Spread the cheese mixture over the meat in an even layer. Top with remaining cheese.
- Bake uncovered for 20 minutes, or until cheese is melted and bubbly.
