Tortilla Wrapped Omelet
This Tortilla Wrapped Omelet is so good; I want to eat it for breakfast, lunch, and dinner. It’s super easy to make, and you can add your favorite omelet toppings. Start with the eggs and tortilla, then add cheese, peppers, diced tomatoes, and onion for a delicious meal. It’s also Keto friendly if you’re watching your carbs.
This is easy to make because the tortilla helps you to flip the eggs over by adding structure. I flipped mine over like a pro, but I give all props to the tortilla.
This recipe was inspired by a similar recipe that’s uses the oven instead of the stove top: Tortilla Quiche Bake. They’re practically the same, but it’s nice to have options.
Then, what do you like in an omelet? Sausage? Jalapeño? Cheese? Yes, add them all in, I’ll tell you how.
Making a Tortilla Wrapped Omelet
Start by melting some butter in a skillet or fry pan. The size of the pan matters, because you want the tortilla to be close to the same size as the bottom of the pan.
In other words, if your tortilla is 7″, you should use a 7 – 9″ pan.
So, lightly scramble the eggs, then season them to taste. I used salt and pepper (keeping it basic), but you can use whatever you love most.
Pour the eggs into the pan with the melted butter and let it start to set up. Don’t stir it, like you would for regular scrambled eggs, just run your spatula around the edges to keep them loose. The bottom will be cooking, while the top is still runny, which is fine. That part will cook when it’s flipped over.
Flipping the Omelet
Next, lay the tortilla right on top of the eggs, then run the spatula underneath the eggs to see if it’s set up. If the bottom is still runny, it’s too soon; let it cook more. If, however, you can loosen it from the bottom of the pan, then it’s time. Hold your breath and flip the whole thing over.
I played it safe and used the spatula, but if you can flip an omelet without one, extra brownie points for you.
By flipping it over, the runny part of the eggs are now cooking, while simultaneously, the tortilla will be browning.
Once you flipped the omelet over, add your toppings.
Add your Toppings
I sprinkled gobs of cheese all over, then added my toppings on one half only. This is because you’ll be folding the omelet in half.
My toppings were green bell pepper, tomatoes, and Canadian bacon. Sometimes I throw in mushrooms. This, however, is where you can use whatever you prefer.
You might like cooked sausage with jalapeño, or fresh basil leaves with mozzarella. Go with your favorites.
If you have toppings you want to add that need to be cooked or sautéed first, be sure to cook them before you start the omelet, because the omelet cooks really fast. I started my peppers and Canadian bacon in a separate pan before I started the omelet, so they would be hot and ready when the omelet was almost done.
So, once you’ve loaded the toppings on, check to see if the bottom of the tortilla is brown. Once it’s a golden brown, turn off the heat, then fold the empty side of the omelet over the half with all the toppings.
It’s ready to eat, but you can always add another slice of cheese on top, or slice an avocado and pour on some salsa.

Tortilla Wrapped Omelet
Ingredients
- 1 Tbsp. butter
- 3 large eggs, lightly scrambled
- salt and pepper to taste (or any other seasonings you love)
- 1 flour tortilla (I used low-carb)
- 1/2 cup cheese such as cheddar or mozzarella
- optional toppings: cooked sausage, cooked bacon, green peppers, diced tomatoes, pepperoni slices, etc.
Instructions
- Sauté in separate pan any toppings that need be cooked before being added to omelet (such as sausage or green peppers).
- In an 8 – 9" sauté pan, add 1 tablespoon butter to melt. Stir the butter around to coat the bottom. Add the 3 eggs and season with salt and pepper. Keeping the pan close to the heat, swirl the eggs around in the pan to evenly cook. Once the edges start to cook, loosen the edges with a spatula.
- Add the tortilla on top of the eggs, and flip over. Sprinkle cheese in even layer over eggs while tortilla browns.
- Add toppings to one half of omelet. Fold empty half of omelet over toppings and serve. Enjoy!
