Making Slow Cooker Chicken Pot Pie
First, season both sides of your chicken. I season heavy with this dish because I’m putting all the seasonings on the chicken, then shredding it and stirring it all together later. In other words, when you season the chicken, you’re really seasoning the whole dish.
Place the seasoned chicken in your crock pot, then the rest is pretty straight forward.
One by one, add the rest of the ingredients, then gently stir them together.
Alternatively, you can add the rest of the ingredients to a bowl, then stir and dump into the pot, but why get another bowl dirty?

Cover and leave it covered. No peeking!
Set the heat on LOW for six hours. This is the best way to insure your chicken is fall-apart tender.
If you just don’t have the time, you can cook it on HIGH for 3 – 4 hours. Still delicious and it makes your kitchen smell heavenly.
Remove the chicken breasts, shred them using two forks, then stir the shredded chicken back into the crockpot. Mix well and let it sit for another 10โ15 minutes to thicken slightly.

Serving Suggestions
Spoon your creamy chicken pot pie mixture into bowls and enjoy them plain, or you can serve with:

- Mashed potatoes (for an ultra-cozy twist) like Classic Mashed Potatoes, Cauliflower Mashed Potatoes, or Sweet Potato Mash.
