No Bake Lemon Lush

A cool, layered lemon dessert made with cream cheese, fresh lemon zest, pudding, and homemade whipped cream all on top of a buttery, cream-filled cookie crust.

Materials

  • 18 - 19 oz. pkg. Golden Oreo cookies, or vanilla cream-filled cookie sandwiches
  • 1/2 cup butter, melted
  • 2 - 8 oz. cream cheese, softened
  • 1 3/4 cups powdered sugar, divided
  • 2 tsp. fresh lemon zest
  • 3 Tbsp. lemon juice
  • 3 cups heavy whipping cream
  • 1 tsp. vanilla extract
  • 3 cups whole milk
  • 2 - 3.4 oz. pkg. instant lemon pudding mix
  • Optional: fresh lemon slices for garnish

Instructions

  • Crush cookies in food processor, then pour into large bowl. Add melted butter and stir to combine. Press mixture in an even layer in bottom of 9 x 13" baking dish. Place in freezer for 10 minutes.
  • Meanwhile, beat cream cheese and 1 1/4 cups powdered sugar until smooth and creamy. Add lemon zest and lemon juice.
  • In separate large bowl, beat heavy whipping cream, vanilla, and remaining 1/2 cup powdered sugar on high speed until stiff peaks form. Fold 1 cup of the whipped cream into the cream cheese mixture.
  • Carefully dollop and spread the cream cheese mixture over the crust. Place back in the freezer for another 10 minutes.
  • Meanwhile, beat dry pudding mix into milk until smooth and thickened. Spread pudding mixture over cream cheese layer. Chill until pudding has set up, approx. 15 minutes.
  • Carefully dollop and spread remaining whipped cream over pudding layer. Refrigerate at least 4 hours, preferably overnight.
  • Optional: garnish with fresh lemon slices. Enjoy!
