No Bake Lemon Lush has delicious flavors of lemon pudding and cream cheese over a buttery, vanilla cookie crust. Topping it off is homemade whipped cream; cool, scrumptious, and the perfect amount of sweet.

This lemony dessert is fun and easy to make in layers. While one layer is chilling, you make the next layer.

Easy peasy…see you in the kitchen.

Making No Bake Lemon Lush

The Crust

Start by turning your vanilla cream-filled cookies into crumbs.

Use Golden Oreo cookies, or whatever store brand version they have of them. For the record, Golden = vanilla flavored.

Another side note, Oreo’s “Family Size” used to be 19.1 oz., but it’s now 18.12 oz. Either size works great.

Place the crumbs in a large bowl and mix thoroughly with the melted butter.

Press this cookie mixture into the bottom of a 9 x 13″ baking dish.

No need to prep the dish first, all that butter in the crust prevents it from sticking.

Press down until the crust is a nice, even layer, then place it in the freezer for 10 minutes, or while you make the next layer.

Cream Cheese Layer

Beat the cream cheese and 1 1/4 cups of the powdered sugar until smooth and creamy.

Add the lemon zest and lemon juice until combined.

In a separate large bowl, you need to make the whipped cream.

A great trick I learned is to place the beaters and the bowl in the freezer for a quick 15 minutes, or so, before beating the heavy cream.

Also, keep the heavy cream in the fridge, too, until you’re ready to use it. Why?

It’s the fat in the cream that helps trap the air bubbles, making it light and fluffy. If the fat melts (from a warm bowl and beaters), the air escapes.

So, once the bowl and beaters are chilled, pour in the heavy cream, vanilla, and the remaining 1/2 cup powdered sugar, then beat on high speed.

Keep beating until stiff peaks form, then it’s done.

Fresh lemon slices garnish a chilled, layered lemon dessert.

Fold one cup of the whipped cream into the cream cheese mixture, and place the remaining whipped cream in the fridge for now.

Carefully dollop and spread the cream cheese mixture over the crust and spread into an even layer.

Place back into the freezer to set up while you make the next layer.

Lemon Pudding Layer

Your next layer is the lemon pudding.

I find it helps avoid some lumps if I add the milk into the bowl first, then slowly add the dry pudding mix.

Beat this until the pudding just starts to thicken, then spread it over the cream cheese layer.

You guessed it, back into the freezer for 15 minutes to set up, then the last step.

Whipped Cream Layer

The last step is to carefully dollop and evenly spread the rest of the whipped cream over the pudding layer.

I say, “carefully,” because if you press down too hard spreading it around, you may end up marbling the pudding with the whipped cream.

For true layers, be gentle. Either way you do it, it’s going to taste fantastic!

Garnish that No Bake Lemon Lush

For a fun, colorful garnish, thinly slice some lemons, then half or quarter them.

Place a few on the tops of each piece before serving.

Ingredients

  • 18 - 19 oz. pkg. Golden Oreo cookies, or vanilla cream-filled cookie sandwiches
  • 1/2 cup butter, melted
  • 2 - 8 oz. cream cheese, softened
  • 1 3/4 cups powdered sugar, divided
  • 2 tsp. fresh lemon zest
  • 3 Tbsp. lemon juice
  • 3 cups heavy whipping cream
  • 1 tsp. vanilla extract
  • 3 cups whole milk
  • 2 - 3.4 oz. pkg. instant lemon pudding mix
  • Optional: fresh lemon slices for garnish

Instructions

  • Crush cookies in food processor, then pour into large bowl. Add melted butter and stir to combine. Press mixture in an even layer in bottom of 9 x 13" baking dish. Place in freezer for 10 minutes.
  • Meanwhile, beat cream cheese and 1 1/4 cups powdered sugar until smooth and creamy. Add lemon zest and lemon juice.
  • In separate large bowl, beat heavy whipping cream, vanilla, and remaining 1/2 cup powdered sugar on high speed until stiff peaks form. Fold 1 cup of the whipped cream into the cream cheese mixture.
  • Carefully dollop and spread the cream cheese mixture over the crust. Place back in the freezer for another 10 minutes.
  • Meanwhile, beat dry pudding mix into milk until smooth and thickened. Spread pudding mixture over cream cheese layer. Chill until pudding has set up, approx. 15 minutes.
  • Carefully dollop and spread remaining whipped cream over pudding layer. Refrigerate at least 4 hours, preferably overnight.
  • Optional: garnish with fresh lemon slices. Enjoy!

    This is another dessert that my husband devoured and called his “favorite”. Lori so far has made about three “favorites”. But I totally agree. The crust was outstanding. I knew I was going to love the crust when I found it was golden Oreos. But I wasn’t sure I was going to like the lemon and cream. I think I was prejudging based on lemon desserts I’ve had in the past made with tub-type whipped topping. The lemon was perfect, sweet and tart at the same time, not overpowering, just right. But the cream was so rich and creamy and nothing like desserts I’ve had in the past. The inclusion of the heavy cream was everything for me. And, did I mention it was beautiful. I give this Lemon Lush a 10/10.
