Spiced Apple Mini Cheesecakes
Enjoy this rich, delicious dessert without all the complications. Spiced Apple Mini Cheesecakes take two favorite desserts and make them into one: cheesecake and apple pie. Scrumptious, yet easy to make, and you won’t have to turn the oven on.
Whoever decided cheesecakes had to be complicated was just crazy.
This no-bake treat uses mini graham cracker crusts, a cheesecake filling, and a delicious apple pie topping.
There’s a little mixing, a little sauteing, then a little chilling. Easy.
Before we start…
Mini graham cracker pie crusts come in packages of six (6).
The cheesecake filling, however, makes enough for 7 or 8.
So, decide how many you want to make.
If you make 6, you will have leftover filling, which can be used on bagels or with ice cream.
If you make 7 or 8, you will have leftover mini pie crusts.
Making Spiced Apple Mini Cheesecakes
Begin by peeling, coring, and dicing the apples.
I tried slicing the apples (instead of cutting into little cubes), but that didn’t work so well. Dicing is better.
Melt the butter in a skillet over medium-high heat, then add the apples and brown sugar.
Stir and cook until apples begin to soften.
Next, add the cornstarch and cinnamon.
Keep stirring until apples are tender, then remove from the heat and set aside to cool completely.
Meanwhile, beat the cream cheese until smooth and creamy.
Then, add the milk, lemon juice, and vanilla.
Pour this cheesecake filling evenly into the mini pie crusts, then refrigerate.
Chill for at least 1 hour giving it time to set up.
Then, before serving, spoon the apples over the cheesecake filling.
Enjoy the indulgence.

Spiced Apple Mini Cheesecakes
Ingredients
- 3 Tbsp. unsalted butter
- 2 large apples, peeled, cored, and diced
- 1/4 cup brown sugar
- 2 tsp. cornstarch
- 1 tsp. ground cinnamon
- 8 oz. cream cheese, softened
- 14 oz. sweetened condensed milk
- 1/4 cup lemon juice
- 1 tsp. vanilla extract
- 6 pre-made mini graham cracker pie crusts (such as Keebler)
Instructions
- In a skillet over medium-high heat, melt butter. Add diced apples and brown sugar; stir often. Once apples begin to soften, add cornstarch and cinnamon, stir to evenly coat. Cook until apples are tender. Remove from heat and allow to cool completely.
- Meanwhile, in small bowl, beat cream cheese until smooth and creamy. Beat in milk, lemon juice, and vanilla. Pour into pie crusts until full or slightly rounded on top. (See Notes below.) Chill in refrigerator for at least 1 hour, or until firm.
- Spoon apple mixture over tops of cheesecakes and serve. Enjoy!
