No Bake Maple Pecan Pie

Don't bother preheating the oven with this No Bake Maple Pecan Pie -- chilled and light enough for summer, but rich with the cozy flavors of autumn.

Materials

  • 2 - 8 oz. bricks cream cheese, softened
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 1/2 tsp. ground cinnamon
  • 1 cup pecans, roughly chopped
  • 1 9" graham cracker crust
  • 8 oz. tub Cool Whip (or homemade whipped cream)

Instructions

  • In a large bowl, beat cream cheese until smooth and creamy. Stir in brown sugar, syrup, and cinnamon. Beat until combined. Fold in pecans. Spread into pie crust in an even layer.
  • Top with Cool Whip or homemade whipped cream (see Notes). Cover and chill in refrigerator for at least four hours. Enjoy!

Notes

For homemade whipped cream, place bowl and beaters in freezer for 15 minutes to chill. Add to bowl 1 cup heavy whipping cream, 2 tablespoons powdered sugar, and 1/2 teaspoon vanilla extract. Beat on HIGH speed until medium-firm peaks form.
