One Skillet Tacos
Perfectly seasoned ground beef mixed with diced tomatoes, green chilies, and rice. Top it off with some shredded cheese, then serve in taco shells, or you roll them into a burrito. Yum!

- 1 lb. ground beef
- 1 oz. envelope taco seasoning
- 14.5 oz. can diced tomatoes
- 7 oz. can diced green chiles
- 2 cups water
- 2 cups Minute Rice
- 1 cup cheddar cheese (or Mexican blend)
In a large skillet, brown the ground beef. Drain off excess fat. Stir in taco seasoning, tomatoes, green chiles, and water. Bring to a boil.
Stir in rice. Cover and simmer until liquid is absorbed, approx. 8 - 10 minutes. Check by stirring aside ingredients to see if liquid is on bottom of skillet. Sprinkle cheese over top and cover until melted.
Serving suggestions: serve in a bowl, or with hard or soft shell corn tortillas, or roll up in a flour tortilla as a burrito. Add hot sauce, avocado, a dollop of sour cream, or fresh cilantro. Enjoy!
