One Skillet Tacos
Keep my cleaning down to just one skillet, please. Thank you! These One Skillet Tacos are great. Everything is in there except the lettuce and the taco shells. There’s ground beef, seasoning, diced tomatoes, and even rice. It’s so delicious that you might just skip the shell and eat it out of the skillet.
I love tacos…and who doesn’t? But let’s face it, tacos can be a lot of slicing and dicing, shredding, and chopping.
This recipe keeps it simple by adding it all into one skillet, then serve. Open a can of diced tomatoes and green chilies and dump them in. Easy, yet delicious.
What’s even easier, then, is re-heating leftovers. Yes! Leftovers have to be my favorite food.
Making One Skillet Tacos
Start with a large skillet or sauce pan. Over a medium-high heat, brown the ground beef. While it’s cooking, add some salt and pepper to taste.
You can also use ground turkey, or even ground chicken here.
Once the beef is cooked, drain off any extra fat.
Next, stir in the taco seasoning packet, diced tomatoes, diced green chilies, and water.
Bring this aromatic mixture to a boil while you measure out your rice.
Stir in your Minute rice, cover, and reduce the heat to a simmer.
Allow the rice to absorb the water, which takes about 5 – 10 minutes.
You can check the absorption by shifting the mixture to the side and see if there’s any water left on the bottom of the skillet.
Also, you can substitute Minute rice with basmati or long grain, just cook it a few minutes longer. Again, just check for water on the bottom of the pan.
Lastly, sprinkle the cheese on top and recover. Let the cheese melt and get all gooey and delicious, then it’s time to eat.
Serving
This recipe is wonderfully flexible when it comes to serving, which is handy when feeding a family.
You can eat it plain from a bowl with nothing added, ergo the easiest and most simple method.
Or, you can serve them in taco shells; soft or crunchy.
Additionally, serve them in a flour tortilla and wrap it up as a burrito.
One other serving idea, quirky as it sounds, would be to serve the taco mixture as a dip, thereby eating it with tortilla chips. That could take a while, though, so maybe don’t use this method if you’re really hungry. Ha!
Toppings?
Yes, go crazy with the toppings. You already know what you like, but I’mma still going to throw some ideas at you.
- hot sauce, pico de gallo, or salsa
- fresh cilantro, diced green onion, and/or fresh avocado
- shredded lettuce
- a dollop of sour cream or Greek yogurt
- fresh jalapeño slices
- sliced black olives for those who remember when Taco Bell used to put them on their enchiladas

One Skillet Tacos
Ingredients
- 1 lb. ground beef
- 1 oz. envelope taco seasoning
- 14.5 oz. can diced tomatoes
- 7 oz. can diced green chiles
- 2 cups water
- 2 cups Minute Rice
- 1 cup cheddar cheese (or Mexican blend)
Instructions
- In a large skillet, brown the ground beef. Drain off excess fat. Stir in taco seasoning, tomatoes, green chiles, and water. Bring to a boil.
- Stir in rice. Cover and simmer until liquid is absorbed, approx. 8 – 10 minutes. Check by stirring aside ingredients to see if liquid is on bottom of skillet. Sprinkle cheese over top and cover until melted.
- Serving suggestions: serve in a bowl, or with hard or soft shell corn tortillas, or roll up in a flour tortilla as a burrito. Add hot sauce, avocado, a dollop of sour cream, or fresh cilantro. Enjoy!
