- 2 lbs. potatoes, cut into 1 1/2" cubes
- 2 Tbsp. olive oil
- 1 tsp. salt
- 3/4 tsp. black pepper
- 1/2 tsp. paprika
- 2 lbs. chicken breast (whole or cubed)
- 12 oz. bottle Parmesan Garlic Sauce (Buffalo Wild Wings)
- 1/2 cup water (or chicken stock)
- 2 cups mozzarella cheese, shredded or thinly sliced
- 1/4 cup Parmesan cheese, grated or shredded
- Garnish: fresh chopped parsley (optional)
Mix together the cubed potatoes, olive oil, 1/2 teaspoon salt, 1/2 teaspoon pepper, and paprika in crock pot. Stir to coat.
Season both sides of chicken with remaining salt and pepper. Lay chicken on top of potatoes. (Chicken can also be cubed, but stays juicier if left whole, then shredded after cooked.)
Stir Parmesan Garlic sauce and water together, then pour over chicken. Cover.
Set crock pot on LOW for 6 hours (preferred method), or on HIGH for 3 - 4 hours.
During last 20 minutes, roughly shred chicken using two forks, stir. Sprinkle mozzarella and Parmesan cheese over top. Re-cover and cook for remaining time, or until cheese is melted and bubbly. Serve with fresh chopped parsley sprinkled over top. Enjoy!
