Slow Cooker Chicken and Potatoes is a comfort-food dinner that’s easy to make and loaded with flavor. Made with fall-apart chicken breasts, tender cubed potatoes, and a rich Parmesan Garlic Sauce. Topped off with melty mozzarella and Parmesan cheese, this slow cooker meal is perfect for busy weeknights or a cozy family dinner.

Making Slow Cooker Chicken and Potatoes
Step 1: Prep the Ingredients
Peel and cut the potatoes into bite-sized cubes and place them in the slow cooker. Add the olive oil, 1/2 tsp. salt, 1/2 tsp. pepper, and the paprika, then stir to coat.
Next, season both sides of the chicken breasts with the remaining salt and pepper, then lay them on top of the potatoes.
Side Note: you can also cube the chicken first, but I recommend leaving them whole and shredding the chicken after they’ve been cooked. This way, the chicken will be juicier, which is why I slow cook in the first place.
Step 2: Mix the Sauce
In a medium bowl, mix together the water and Parmesan Garlic Sauce (found on the condiment isle between the ketchup and salad dressing). You can also use chicken stock in place of the water.
Pour the sauce over the ckicken.
Step 3: Cook Low and Slow
Cover and cook on LOW for 6 hours, which is the preferred method, or HIGH for 3โ4 hours; basically until the chicken is cooked through and the potatoes are fork-tender.
Step 4: Add the Cheese
During the last 20 minutes, sprinkle the mozzarella and Parmesan cheese over the top. Re-cover for the remainder of time, or until the cheese is melted and bubbly.
Step 5: Serve and Enjoy
Serve warm, garnished with fresh chopped parsley or extra Parmesan if desired.

Ingredients
- 2 lbs. potatoes, cut into 1 1/2" cubes
- 2 Tbsp. olive oil
- 1 tsp. salt
- 3/4 tsp. black pepper
- 1/2 tsp. paprika
- 2 lbs. chicken breast (whole or cubed)
- 12 oz. bottle Parmesan Garlic Sauce (Buffalo Wild Wings)
- 1/2 cup water (or chicken stock)
- 2 cups mozzarella cheese, shredded or thinly sliced
- 1/4 cup Parmesan cheese, grated or shredded
- Garnish: fresh chopped parsley (optional)
Instructions
- Mix together the cubed potatoes, olive oil, 1/2 teaspoon salt, 1/2 teaspoon pepper, and paprika in crock pot. Stir to coat.
- Season both sides of chicken with remaining salt and pepper. Lay chicken on top of potatoes. (Chicken can also be cubed, but stays juicier if left whole, then shredded after cooked.)
- Stir Parmesan Garlic sauce and water together, then pour over chicken. Cover.
- Set crock pot on LOW for 6 hours (preferred method), or on HIGH for 3 – 4 hours.
- During last 20 minutes, roughly shred chicken using two forks, stir. Sprinkle mozzarella and Parmesan cheese over top. Re-cover and cook for remaining time, or until cheese is melted and bubbly. Serve with fresh chopped parsley sprinkled over top. Enjoy!
