- 1 onion, chopped
- 1 Tbsp. cumin
- 1 tsp. chili powder
- 1 tsp. salt
- 1 tsp. black pepper
- 1 tsp. paprika
- 1 tsp. dried oregano
- 2 lbs. skinless, boneless chicken breast
- 3 cloves garlic, minced
- 2-15.5 oz. cans white kidney or Great Northern beans, drained and rinsed
- 2-4 oz. cans diced green chiles
- 12 oz. bag frozen corn
- 3 cups chicken broth (or more)
Place the chopped onion in the slow cooker. Mix the seasonings together: cumin, chili powder, salt, pepper, paprika, and oregano. Season both sides of the chicken, then place chicken in slow cooker.
Add to slow cooker garlic, beans, green chiles, and corn. Add enough chicken broth to cover ingredients. (Start at about 3 cups, then add more if necessary.)
Set heat to LOW (preferred setting) for 6 - 7 hours, or HIGH for 3 - 4 hours. Chicken is done when a meat thermometer reads 165°F.
Shred chicken in slow cooker with two forks. Optional toppings: fresh cilantro, sour cream or Greek yogurt, tortilla strips, and/or shredded cheese. Enjoy!
