Making Slow Cooker Chicken Chili

First, place the chopped onion in the slow cooker. This puts a barrier between the chicken and the heating element, which is always a good start.

Next, mix the seasonings together in a small bowl, then season both sides of the chicken breasts. Once seasoned, place the chicken on the onion.

Then, just add the minced garlic, beans (make sure you drained and rinsed them first), diced green chiles, and corn. Add the corn straight from the freezer, because it’ll defrost in a hurry.

Last ingredient to go in is the chicken broth. Start by adding about three cups, as you want to just cover the ingredients, however, you can more or less to your liking.

Set the heat on LOW, which is the preferred setting for 6 – 7 hours. Low and slow is what slow cookers do best.

You can also set it on HIGH for 3 – 4 hours, though, if you just can’t wait.

Shred the Chicken

There’s two ways to go about this. First, remove the chicken breasts, shred them with two forks, then return the shredded chicken to the slow cooker, or second, simply leave the chicken in the slow cooker and use those forks to shred it there. Whichever is easier for you.

Serving Chicken Chili

I’d eat this plain all day, no problems, however, toppings are not only fun, they make people happy.

Optional toppings include fresh cilantro, sour cream or Greek yogurt, your favorite shredded cheese, or add some tortilla strips. You find those with other salad toppers.

Additionally, give it a squeeze of lime for some bright citrus notes.

White kidney beans, fall apart chicken, green chiles, all in a broth for a delicious meal.

Ingredients

  • 1 onion, chopped
  • 1 Tbsp. cumin
  • 1 tsp. chili powder
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1 tsp. paprika
  • 1 tsp. dried oregano
  • 2 lbs. skinless, boneless chicken breast
  • 3 cloves garlic, minced
  • 2-15.5 oz. cans white kidney or Great Northern beans, drained and rinsed
  • 2-4 oz. cans diced green chiles
  • 12 oz. bag frozen corn
  • 3 cups chicken broth (or more)

Instructions

  • Place the chopped onion in the slow cooker. Mix the seasonings together: cumin, chili powder, salt, pepper, paprika, and oregano. Season both sides of the chicken, then place chicken in slow cooker.
  • Add to slow cooker garlic, beans, green chiles, and corn. Add enough chicken broth to cover ingredients. (Start at about 3 cups, then add more if necessary.)
  • Set heat to LOW (preferred setting) for 6 – 7 hours, or HIGH for 3 – 4 hours. Chicken is done when a meat thermometer reads 165ยฐF.
  • Shred chicken in slow cooker with two forks. Optional toppings: fresh cilantro, sour cream or Greek yogurt, tortilla strips, and/or shredded cheese. Enjoy!
