Making a No Bake Chocolate Truffle Pie

First, let’s not turn the oven on. We are, however, going to use the microwave.

That said, in a microwave-safe bowl, add the chocolate chips and 3/4 cup of the heavy whipping cream. Heat in 30 second intervals, stirring between, until the chocolate is melted. Stir until smooth and creamy, then allow to cool until room temperature.

While that’s cooling, sift the powdered sugar. Then, once the chocolate has cooled down, stir in the powdered sugar and vanilla. Set aside for now.

Meanwhile, place a small bowl and beaters in the freezer. These need to chill for 15 – 20 minutes, because it’s the best way to whip heavy whipping cream.

Add the remaining 3/4 cup heavy whipping cream to the chilled bowl and beat on low speed until the cream becomes foamy. At that point, increase your speed to high until soft peaks form.

Then, fold the whipped cream into the chocolate mixture until combined, then spread into the pie crust (chocolate or pecan). Cover the pie and refrigerate for 8 hours, or overnight, thus allowing the flavors time to meld together. Delicious!
