Making Chocolate Chip Banana Pie

First, have your chocolate pie crust ready. Either buy one pre-made like I did, or make one from scratch, bake it, and let it cool. I’m going easy on myself today, so I bought one, thus keeping it a “no bake” recipe.

Next, slice your bananas into the pie and arrange them into an even layer. Don’t worry too much about if it’s too much or too little. In my experience, even when it looks like too many banana slices, it ends up tasting like I could have added more.

Whipping Heavy Cream

For the best texture and volume, it’s important to use cream straight from the refrigerator, as opposed to it sitting out getting warm. It also helps chilling the bowl and beaters beforehand to ensure that the cream stays cold during the whipping process.

So, once the bowl is chilled, add the heavy cream, powdered sugar, and vanilla.

Then, using a stand mixer or handheld mixer, crank up the speed on your beaters to medium-high and wait for medium peaks to form.

Disclaimer: you can still whip the cream without first chilling the bowl and beaters, but you’ll have a more positive experience if everything is cold.

Once the cream has been whipped, it’s time to start the pudding.

In a large bowl, add the dry pudding mix to the milk and beat until smooth and creamy.

Next, gently fold half the whipped cream mixture along with 3/4 cup of the chocolate chips into the pudding. Once combined, pour and spread into the crust.

For the topping, spread the remaining whipped cream over the top, then sprinkle on the remaining chocolate chips.

Now, I know you want to dive in right away, because you’ve been smelling the chocolate and probably licking the beaters, but it needs to chill, and so do you. Ha!

Let the pie set up in the refrigerator for at least two hours, then sit back and indulge yourself. So good, and worth the wait!
