Slow Cooker Honey Garlic Chicken

Bold flavors of garlic, honey, and soy sauce over tender, pull-apart chicken. A few simple ingredients make the sauce, then shred the chicken after it's done cooking.

Materials

  • 1/2 cup honey
  • 1/2 cup low-sodium soy sauce
  • 3 Tbsp. garlic, minced
  • 1 Tbsp. rice vinegar
  • 2 tsp. chili sauce
  • 1 1/2 lbs. chicken breast, skinless, boneless (2 breasts)
  • 1/2 Tbsp. cornstarch
  • Optional: sesame seeds and diced green onion for topping.

Instructions

  • Line your crock pot with a liner if you have one. Makes cleanup much easier.
  • In a small bowl, mix together the honey, soy sauce, garlic, vinegar, and chili sauce. Pour a little into the crock pot.
  • Place the chicken in the crock pot, then pour remaining sauce over the chicken. Cover.
  • Cook on LOW for 6 - 8 hours, or on HIGH for 3.5 - 4 hours. When done cooking, internal temperature should be 165°.
  • Shred chicken with 2 forks and remove about 1/2 cup sauce to a bowl. Whisk in cornstarch until dissolved, then stir back into pot. Re-cover. Allow sauce to thicken up, about 15 - 20 minutes.
  • Serve over fragrant rice, such as jasmine or basmati. Top with sesame seeds and diced green onion. Enjoy!
