Brownies:
- 1/3 cup canola or vegetable oil
- 2 large eggs
- 15.25 oz. box strawberry cake mix
Frosting:
- 3 oz. cream cheese, softened
- 1 cup powdered sugar
- 2-3 mashed ripe strawberries, average size
- pinch salt
Brownies:
In a large bowl, whisk together the oil and eggs until combined. Using a stiff spoon, add the strawberry cake mix and stir until fully incorporated. The batter will be very thick.
Press the batter evenly into the prepared baking dish. (Using your hand makes this much easier.) Bake for 20 minutes, or until the center is set. Allow the brownies to cool completely before frosting.
Frosting:
Beat the softened cream cheese until smooth and creamy. Add the powdered sugar, mashed strawberries, and a pinch of salt. Mix until combined. Spread over the cooled brownies. Refrigerate for at least 1 hour so the frosting can firm up before slicing and serving. Enjoy!
