Tilapia and Asparagus Foil Packets
A moist and delicious meal of tender tilapia and crisp fresh asparagus, yellow squash, and mushrooms topped with capers.

- 1 bunch asparagus, rough ends removed, divided
- 2 yellow squash, sliced and divided
- 8 oz. sliced mushrooms divided
- garlic powder to taste
- 4 6 oz. tilapia fillets, thawed
- salt and paprika to taste
- 4 Tbsp. butter, divided
- 4 tsp. lemon juice, divided
- 1 tsp. dried oregano, divided
- 2 Tbsp. capers, drained and divided
Preheat oven to 375°. Lay out 4 - 2 foot sheets of foil.
For each meal lay the asparagus in the shape of a raft off center on the foil. Add the squash and mushrooms on top, garlic to taste.
Lay the tilapia on top of the veggies. Salt and paprika to taste.
Dab (or spread) the butter on next, followed by the lemon juice, dried oregano, and capers.
Fold the foil over and seal the 3 sides. Place the foil packets on a jelly pan or in glass dishes.
Bake for 20 minutes. Carefully open the foil packets -- the steam will be HOT. Remove from the foil. Enjoy.
