Turkey Sausage Spaghetti Frittata
A delicious combination of healthy turkey sausage, sauteed onions and mushrooms, diced tomatoes, zucchini, cheese and eggs.

- 8 oz. spaghetti, uncooked
- 1 Tbsp. olive oil
- 1 medium onion, sliced
- 2 cups sliced mushrooms
- 1 tsp. garlic powder
- 1 medium zucchini, sliced and halved
- 15 oz. can diced tomatoes, undrained
- 13 oz. Hillshire Farm turkey smoked sausage, sliced
- 1/2 tsp. oregano
- salt and pepper to taste
- 1 cup shredded cheddar cheese
- 8 eggs, (or 2 cups egg substitute)
Preheat oven to 350°. Cook pasta according to package.
Meanwhile, heat oil in a large skillet or dutch oven. Add onions, mushrooms, and garlic powder until onions are tender. (about 5 min.)
Add zucchini and tomatoes with the liquid, Cook until most of the liquid has evaporated, stirring occasionally. (about 10 minutes)
Drain pasta and add to skillet along with the turkey sausage, oregano, salt, pepper, and cheese. . Mix thoroughly.
In separate bowl, gently beat eggs.
Spray bottom of 13 x 9 dish. Add skillet ingredients. Pour eggs over top.
Bake uncovered for 40-45 minutes or until set in the middle. Enjoy!
You can cover the top with foil after about 35-40 minutes if the top begins to brown too much.
Refrigerate leftovers.
