I’ve made this before with just green bell peppers, but I really like to mix up the colors using red, yellow, and orange. There’s already green cilantro and jalapeno, so green is covered. The red onion stands out with that pretty purple color, although, you can use whatever onion you already have.

Also, I pealed the apples, but if I hadn’t, the peal would be another color to throw into the mix. I might rethink this the next time I make it. It’s your choice, though, it won’t change the flavor.

This recipe can be adjusted to your preferences. Don’t like jalapenos? Leave them out. Love garlic? Throw some in.

Since apples like to brown once you’ve cut into them, I tend to leave the apples for last, then I put the completed salsa in the refrigerator until I’m ready to serve.

My favorite, however, is to serve this salsa with my Roasted Almond Pork Loin. What is it about pork and apples? So delicious!

The secret to making a great Apple Salsa with Cilantro is to use fresh ingredients. That’s it. Pretty easy, right? We all like easy.

Also, make sure you take the seeds out of the jalapeno unless you can handle crazy hot food.

One seed and I’d be done for.

To make the Apple Salsa with Cilantro uniform, try chopping each ingredient to the same approximate size as the rest of the ingredients.

This is certainly not necessary, just something I attempt to do when I remember.

Ingredients

  • 1/2 cup red bell pepper, [or other color(s)], seeded and diced
  • 1/4 cup cilantro, chopped
  • 1/3 cup red onion, diced
  • 1/2 jalapeno, seeded and diced
  • 2 large apples, cored and diced
  • 2 limes, juiced
  • 1 tsp. honey
  • salt and pepper to taste

Instructions

  • Mix together bell pepper, cilantro, onion, jalapeno, saving the apples for last so they don't brown. Squeeze limes over mixture and add honey, salt, and pepper. Store in the refrigerator.

    I made this but the dryness of the end product was not appealing to me. Can you blend up a portion of the salsa and add it back in to provide some moisture/juice? There is nothing wrong with the taste but the dry texture does not appeal to me.
