Garlic Herb Tortellini
First, heat your oven to 400ยฐF and have your large baking pan at the ready. Also, fill a pot with salted water and heat to a boil, which will be for the tortellini.
On the baking pan, add the tomatoes and garlic. Dribble the olive oil over the tomatoes, then sprinkle with salt and black pepper. Push the tomatoes aside just a bit to make room in the center.
Then, in the center of the tomatoes, place the two blocks of Boursin cheese. Yes, take them out of the container, and it doesn’t have to look pretty.
Bake the tomatoes and Boursin for 20 – 25 minutes, or until the cheese is melted and the tomatoes appear blistered. Yummy!
Meanwhile, cook your tortellini per package directions. Drain the tortellini, then put it back in the pot.
Once the tomatoes are done, remove them from the oven. With the back of a large serving spoon, or a spatula, (potato masher?) mash the tomatoes. Squish! They’ve been cooking for 20 minutes, so they won’t put up much of a fight. Then, stir the tomatoes with the melted Boursin cheese to create the sauce. So good, and so easy.
Pour the sauce over the tortellini and add the baby spinach. Stir together over low heat until the spinach wilts.
Lastly, garnish with fresh chopped basil and/or extra Parmesan cheese. Spoiler alert: this makes for some awesome leftovers.

Ingredients
- 8 oz. container cherry tomatoes
- 3 cloves garlic, minced
- 1 Tbsp. olive oil
- 1/2 tsp. each salt and black pepper
- 2 – 6 oz. containers Boursin Cheese (Garlic & Herb)
- 20 oz. pkg. tortellini (family-sized like Buitoni 3 Cheese)
- 3 – 4 cups fresh baby spinach
- 1 cup fresh basil, chopped
Instructions
- Preheat oven to 400ยฐF.
- On a large baking dish, add cherry tomatoes and minced garlic. Dribble olive oil over tomatoes. Add salt and pepper. Push tomatoes aside to create room in the middle.
- In the center of the tomatoes, place the Boursin cheese blocks. Bake uncovered for 20 – 25 minutes, or until the cheese is melted and the tomatoes are blistered.
- Meanwhile, cook the tortellini in a pot of salted water per directions on package. Drain tortellini, then put back in the pot until sauce is done.
- Remove baking pan from oven and mash tomatoes with back of spoon or a spatula. Stir tomatoes with cheese to create sauce. Pour sauce over tortellini and add baby spinach. Stir over low heat until spinach wilts.
- Serve with fresh basil and/or extra Parmesan. Enjoy!
