Baked Tortellini with Sausage
For a quick and easy dinner, enjoy this Baked Tortellini with Sausage. It’s easy to make, it’s delicious, and it’s even better the next day as leftovers. Your favorite flavor tortellini smothered in a sauce of sour cream and pasta sauce, with sausage coins mixed in. Baby spinach adds to the savory flavor, then top it off with mozzarella cheese. Delicious.
Baked Tortellini with Sausage is really easy to make. It’ll taste like it took hours to prepare, but that can be our little secret.
Nothing to put away or measure, the containers of everything in this recipe can be thrown away as soon as you open it. Assuming, of course, that you buy it in the exact size.
I actually designed the recipe with that in mind, keeping it as simple as possible for those busy nights.
Making Baked Tortellini with Sausage.
To throw this all together, start by spraying the 13 x 9″ baking dish and preheating your oven to 350°.
In a large pot, make the refrigerated tortellini per package directions. I used Buitoni, and it only took 7 minutes. Easy peasy.
Making the sauce.
Meanwhile, in another large pot, start the sauce. Pour in the pasta sauce, sour cream, and sausage.
Speaking of the sausage, I used Hillshire Farm Turkey Smoked Sausage. It’s already cooked, you just have to heat it up. Again, easy.
Cut the sausage into bite-size coins and throw them into the sauce.
Also, turkey sausage tastes great, but it’s much lower in calories and cholesterol than regular sausage made with pork and beef.
As I become older and wiser, I lean toward healthier versions of ingredients when I can.
I use the same sausage in my Turkey Sausage Spaghetti Frittata, which is great for breakfast or brunch.
Can I bake it now?
No. You have to add the spinach into the sauce and watch it magically disappear. Ok, it doesn’t disappear, but it does amazingly shrink in size when it wilts.
When the tortellini is done cooking, drain it, then add it into the pot with the sauce. Stir it a few times, then pour it into the prepared baking dish.
Sprinkle the shredded mozzarella cheese on top.
If your oven is ready, bake it uncovered for 20 minutes, then ring the dinner bell.
Baked Tortellini with Sausage
Ingredients
- 20 oz. refrigerated tortellini, any flavor
- 24 oz. pasta sauce
- 8 oz. sour cream
- 13 oz. turkey sausage
- 5 oz. baby spinach
- 8 oz. mozzarella cheese, shredded
Instructions
- Preheat oven to 350°. Spray 13 x 9 baking dish with cooking spray.
- Cook tortellini per directions on package.
- Meanwhile, in large pot heat pasta sauce, sour cream, and sausage. Add spinach and stir.
- Drain tortellini and add to pot, stir. Pour into baking dish. Spread cheese evenly over top.
- Bake uncovered for 20 minutes. Enjoy!

What goes with Baked Tortellini with Sausage?
Typically, I serve mine with a Caesar salad and Parmesan Garlic Toast. If I buy the pre-packaged salad, that’s super easy, and the toast is seriously easy to make, and so totally worth it.
One thing I have to say, and I know I’m repeating myself, is that this recipe is really great as leftovers. The magic that happens in the refrigerator is something I’m always happy about.
Another recipe I have that loves the refrigerator is my Cauliflower Ham Hotdish. Like the tortellini recipe, it’s good straight from the oven, but as a leftover?…love it! The flavors all blend together in perfect harmony to create scrumptiousness.
