Making Chicken Fajitas
Grab your large skillet. Heat the olive oil on medium heat, then start cooking the chicken. Season with some black pepper and garlic powder. It should start smelling good now.
Once the chicken is cooked through, set it on a plate, because you’re going to keep using the skillet.
Also, preheat the oven to 350ยฐ.
Then, add the onion and bell peppers to the skillet, still on medium heat, and cook until tender.
Now, add the chicken back to the skillet along with all the pan juices that settled on the plate.

Stir in the sour cream and cream cheese (roughly sliced to melt faster). Also, add the taco seasoning and about half the cheddar cheese. You don’t have to measure it, just eye-ball it.
Stir everything together real well so that it’s evenly coated, then sprinkle the remaining cheddar cheese on top.
Bake uncovered for 20 minutes, then ring the dinner bell.

Ingredients
- 1 Tbsp. olive oil
- 2 lbs. skinless, boneless chicken breast (or thighs), cut into 1 – 2" pieces
- 1 tsp. black pepper
- 1 tsp. garlic powder
- 4 bell peppers, sliced (I used 3 colors for taste and color)
- 1 small onion, sliced
- 1/2 cup sour cream (4 oz.)
- 4 oz. cream cheese (roughly sliced to melt faster)
- 3 Tbsp. taco seasoning (or 1 packet) like Dan-O's Seasoning (carb free)
- 2 cups cheddar cheese, divided shredded
Instructions
- Heat oil in skillet over medium heat. Add chicken pieces. Season with pepper and garlic powder. Cook until done (approx. 8 min.). Set aside on a plate. Preheat oven to 350ยฐ.
- Add bell peppers and onion to hot skillet. Cook on medium heat until tender. Add chicken back to skillet with all the pan juices from the plate.
- Stir in sour cream, cream cheese, taco seasoning, and half the cheddar cheese. Stir well to evenly coat. Sprinkle remaining cheddar cheese on the top and bake uncovered for 20 minutes.
- Garnish with all your favorite taco toppings: cilantro, diced tomatoes, red onion, guacamole, or salsa. Enjoy!
