Jack Cheese Dip
Jack Cheese Dip has bold flavors of green chilies, olives, and Italian dressing in this delicious appetizer. Serve with tortilla chips or fresh, crisp veggies, and be prepared to become slightly addicted.
Chose your favorite Jack cheese as the base for this dip; Monterey, Colby, Cheddar, or Pepper Jack.
Monterey and Colby are similar in taste, although Monterey is not colored, whereas Colby has a slight orange hue and a nuttier flavor.
Cheddar Jack will give you some sharpness.
Pepper Jack, on the other hand, brings the heat with the addition of jalapeño peppers that are peppered throughout the cheese. (Pun intended.)
Making Jack Cheese Dip
First, decide which Jack cheese you want to use, then add four cups to either a mixing bowl, or put it right into your serving bowl, if you think it will all fit. It makes approx. six cups altogether.
By making it in a mixing bowl, you can then serve in a smaller bowl, and simply refill as needed.
Add the remaining ingredients and mix together. Easy, right? I love the easy ones.
When adding the Italian dressing, I will give you one piece of advice, specifically if you make the dressing from a dry packet.
That’s what I used, a dry packet of Italian dressing, then added the vinegar and oil, etc. per package directions.
When I added my dressing to the dip, all I could taste was the vinegar. Ugh, nasty!
Trust in Fridge Magic
This is why I recommend refrigerating first. Even the packet of Italian dressing says to refrigerate before using, so it makes sense.
Now, if you use an Italian dressing that’s premixed, or has been in your refrigerator for longer than two hours, well then, I would still refrigerate first.
Ha! Gotcha. No, you can serve immediately, but these flavors will always compliment each other better after some fridge magic.
Another example is my Cream Cheese Stuffed Celery. It’s made with a dry packet of Ranch dressing, which says right on the packet that you need to refrigerate before serving. I usually taste as I go, but learned not to taste that one before refrigerating.
The same goes with this dip.
Serving Your Dip
Serve your Jack Cheese Dip with tortilla chips (my fave!), or with some fresh veggies or crackers.
You could also spread some on a sandwich for a punch of flavor. Additionally, add a large scoop on your salad instead of using dressing.
So good! All that deliciousness should be eaten in as many ways as possible.

Jack Cheese Dip
Ingredients
- 4 cups Jack cheese (Monterey, Colby, Cheddar, or Pepper)
- 4 green onions, sliced
- 4 oz. can green chilies, chopped
- 3 medium fresh tomatoes, seeded and diced
- 2.25 oz. can ripe olives, sliced and drained
- 1/3 cup fresh parsley, finely chopped
- 1/2 cup Italian dressing
Instructions
- In a mixing bowl, or your serving bowl, mix all ingredients together. Stir until combined.
- For optimal flavor, cover and refrigerate for 2 hours. Serve with tortilla chips or fresh, crisp veggies. Enjoy!
