Lemon Blueberry Bliss Cake

There are desserts that whisper โ€œlemon,โ€ and then there are desserts that walk in, flip their hair, and practically sparkle with citrusy confidence. Lemon Blueberry Bliss Cake is that cake. Bright, tangy, dotted with juicy blueberries, and unapologetically easy thanks to a couple of smart shortcuts.

Itโ€™s the kind of cake that looks like you fussedโ€ฆ but really, you just stirred, baked, and accepted compliments like the baking genius you are.

Lemon Blueberry Bliss Cake is perfectly moist thanks to the pudding mix.

Why Youโ€™ll Love This Recipe

  • Uses simple ingredients (hello, cake mix magic)
  • Packed with real lemon flavorโ€”juice and zest
  • Blueberries in every bite (not just sitting on top looking decorative)
  • Perfectly moist thanks to pudding mix
  • Bundt pan = instant bakery-level presentation
Powder sugar coated blueberries folded into cake batter, then smoothed on top in Bundt pan.

Making a Lemon Blueberry Bliss Cake

  1. Preheat oven to 350ยฐF and generously spray a Bundt pan with non-stick spray.
  2. In a medium bowl, whisk together the lemon cake mix and instant lemon pudding mix. Set aside.
  3. In a large bowl, mix together the eggs, water, vegetable oil, fresh lemon juice, and lemon zest until well combined.
  4. Add the dry ingredients to the wet ingredients and mix just until combined. Donโ€™t overmixโ€”this isnโ€™t a workout.
  5. In a zip-top bag, add the blueberries and powdered sugar. Seal and gently shake until evenly coated. (This helps keep them from sinking to the bottom like theyโ€™ve given up.)
  6. Fold the blueberries into the batter.
  7. Pour the batter into the prepared Bundt pan and smooth the top.
  8. Bake for about 40 minutes, or until a toothpick inserted into the center comes out clean or with a few tiny crumbs.
  9. Cool in the pan for 15 minutes, then invert onto a wire rack to cool completely.
Lemon Blueberry Bliss Cake is packed with real lemon flavor -- juice and zest.

Topping Ideas (Choose Your Mood)

  • Small Batch Whipped Cream โ€“ light, fluffy, and lets the lemon shine
  • Simple Glaze โ€“ powdered sugar + a splash of milk + vanilla
  • Easy Lemon Glaze — like I used on my Glazed Lemon Bread
  • Cream Cheese Frosting โ€“ for when you want to take things over the top
  • Powdered Sugar — because sometimes simple is best
  • Buttercream — vanilla, or go bold with lemon
Customize your dessert with a list of optional toppings, like whipped cream, frosting, or powdered sugar.

Pro Tips

  • Room temperature eggs mix more smoothly and help with textureโ€”worth the tiny bit of planning.
  • Tossing blueberries in powdered sugar (instead of flour) keeps the cake tender and avoids that dusty look.
  • If using frozen blueberries, donโ€™t thaw them firstโ€”theyโ€™ll bleed less into the batter.
  • Grease that Bundt pan like you mean it. No one wants a cake that comes out in pieces.

How to Customize a Lemon Blueberry Bliss Cake

  • Swap lemon pudding for vanilla if you want a slightly softer lemon flavor
  • Add a teaspoon of almond extract for a subtle bakery-style twist
  • Stir in white chocolate chips if youโ€™re feeling a little extra
  • Use raspberries or a mix of berries instead of just blueberries

This cake is officially my favorite dessert. It is so delicious. Even the kids loved it and they are not big citrus fans. It has such rich and delicious flavor, but it’s very easy to make. I’m definitely going to be making this cake for every summer party and cookout.
