Macaroon Brownie Topping

There’s nothing like changing up your ordinary brownie recipe with a fresh new Macaroon Brownie Topping. It’s so simple to make with easy-to-find ingredients, plus it gives your brownies that WOW factor. The delicious brownie flavor is still there, but added to it is a flavorful coconut and chocolate-chip topping that also dresses it up.

I prefer baking from scratch when I have the time. I guess it just feels more personal to me, but for whatever reason, it makes me happy to say, “I made this for you from scratch.” 

If you have the time, try my Chewy Gooey Walnut Brownies with the Macaroon Brownie Topping, it’s what I used in the pictures.

Having said that, life get’s so busy sometimes, so please know I also love and often use boxed brownie mixes.

I love that they come in different flavors, too. Have you tried the dark chocolate brownies? So good!

Making the Macaroon Brownie Topping

What I like about baking is when I can mix everything together in just one bowl. I’m a happier baker when I have fewer dishes to wash.

So once you make your brownie batter and pour it into your 9 x 13 baking dish, then use the same bowl.

Mix all of the Macaroon Brownie Topping ingredients together and drop by teaspoons onto of the brownie batter.

Bake according to brownies directions whether you’re using a box mix or making it from scratch.

Choosing your chocolate chips

My favorite chocolate chip is the semi-sweet, but you can use any flavor you want to here. I think white chocolate chips would look nice and I bet peanut butter chips would also taste delicious.

As pictured in these photos, I used mini chocolate chips, but feel free to mix it up.

If you wanted a bolder look, take a chocolate bar and roughly chop it, or you can chop up regular chips if you want to keep them smaller, but don’t have any minis on hand.

I don’t like to sweat the small stuff, just have fun with it.

Macaroon Brownie Topping

A delicious coconut chocolate chip topping great on any brownie.

Materials

  • 1 batch brownies, un-baked
  • 1 1/4 cup sweetened coconut
  • 1/3 cup sugar
  • 1/4 cup mini semi-sweet chocolate chips
  • 2 Tbsp. all-purpose flour
  • 1/2 tsp. vanilla
  • 2 egg whites
  • dash of salt

Instructions

  • Preheat oven according to brownie directions. Prepare batch of brownies and pour into prepared 9 x 13 dish. Set aside.
  • In medium bowl, mix remaining ingredients. Drop by teaspoon on top of brownie batter.
  • Bake according to brownie directions. Enjoy!
