Making No Bake Pumpkin Lasagna

1. Make the Crust

First, choose what flavor profile you want for your crust: graham cracker, gingersnap, or Nilla Wafer crumbs. Spoiler Alert: they’re all scrumptious.

To clarify, however, graham crackers are mildly sweet, lightly honeyed, classic. Use when you want the pumpkin and spice flavors to shine without competition. Gingersnaps, on the other hand, are bold, spicy, warm ginger + molasses punch. Perfect for fall purists who want maximum seasonal flavor. Lastly, there are Nilla Wafers, which have that sweet, buttery, nostalgic vanilla cookie taste. Itโ€™s the sweetest option and pairs beautifully with the cream cheese layer. Take your pick.

So, back to the dessert. In a large bowl, mix the crumb mixture of choice together with sugar. Stir in the melted butter, then press into the bottom of your prepared 8 x 11″ baking dish, thus forming a firm, even crust.

Place in the freezer to set up while you wipe out the bowl and make the next layer.

2. Cream Cheese Layer

In that same bowl, beat together cream cheese and powdered sugar until smooth and creamy. Then, fold in half of the whipped topping.

Dollop this fluffy mixture over the chilled crust and gently spread into an even layer. Return dish to the freezer while you wipe out the bowl (again) and work on the next layer. (Sound familiar?)

3. Pumpkin Layer

In that same bowl, beat together the pumpkin, milk, pumpkin pie spice, and vanilla. Once combined, gradually beat in the dry pudding mix.

    Once thick and smooth, dollop the pumpkin mixture over the cream cheese layer. Gently spread into an even layer being careful to not mix into cream cheese layer.

    This time, place in the refrigerator to fully set up for at least one hour. Oh, and you’re done with the bowl now.

    4. Topping(s)

    First, spread the remaining whipped topping over the top. Then, for a bakery-worthy finish, (or just because it’s fun) drizzle with salted caramel sauce and/or sprinkle with toasted pecans.

    Further, you could top with mini chocolate chips and a white chocolate drizzle. Wait, how about candied walnuts with a maple syrup drizzle? So good! Another one, sprinkle a cinnamon-sugar over the top. Yes!

    Refrigerate until ready to serve and be prepared to share the recipe, because they’re going to ask for it.

    Ingredients

    Crust:

    • 1 1/2 cup graham cracker crumbs (or gingersnap, or Nilla Wafer crumbs)
    • 2 Tbsp. granulated sugar
    • 7 Tbsp. unsalted butter, melted

    Cream Cheese Layer:

    • 8 oz. cream cheese, softened
    • 1 cup powdered sugar
    • 16 oz. frozen whipped topping, thawed (divided)

    Pumpkin Layer:

    • 15 oz. can pure pumpkin
    • 1 1/2 cups cold milk
    • 1 tsp. pumpkin pie spice
    • 1 tsp. vanilla extract
    • 3.4 oz. box instant vanilla pudding mix

    Topping:

    • frozen whipped topping, (from above)
    • OPTIONAL: salted caramel sauce, toasted chopped pecans

    Instructions

    • Spray the bottom of an 8 x 11" baking dish with non-stick spray.

    Crust:

    • In large bowl, mix together crumbs and sugar. Add melted butter and stir. Press into bottom of prepared baking dish. Set in freezer to set.

    Cream Cheese Layer:

    • In large bowl, beat cream cheese and powdered sugar until smooth and creamy. Fold in half of the whipped topping. Dollop over crust and gently spread into even layer. Return to freezer.

    Pumpkin Layer:

    • In large bowl, beat together pumpkin, milk, spice, and vanilla. Slowly add the dry pudding mix until fully combined. Dollop over cream cheese layer and gently spread into even layer. Place in refrigerator for at least one hour.

    Topping:

    • Spread remaining whipped topping evenly over top of pumpkin layer.
    • Optional: drizzle salted caramel sauce and/or sprinkle toasted chopped pecans over top. Keep refrigerated. Enjoy!

      Best dessert I have ever had in my life. It is sweet and cold and creamy and crunchy and delicious. I am going to make this so many times this season and maybe a few times next season as well !!!!!!!!!!!
